Wood is the first thing you punch down before you can make anything. Wood allows you to build your first crafting table. Wood is used in a myriad of crafting recipes, covering various uses like tools, weapons, illumination, transportation, and even redstone circuitry. Wood is the very foudnation of crafting in Minecraft. Without wood, there can be no crafting. No crafting of tools, and no mining can take place.
(Unless you count using your bare hands as mining.)

However, the bucket allows you to make farms, use water to push mobs/items places, get milk to cure poison, stop yourself from being on fire, and get to the nether.

You can also beat the game without a bucket. Its much easyer if you have wood and no bucket IMO. You can also farm without a bucket.

A splash potion of fire resistance. I don't know how many times having one of those in my hotbar has saved me from losing diamonds I'm mining, and very handy to bring with you into the Nether.
If we are actually talking about items I would say sticks, a pickaxe is not very useful if you can't hold it, and a torch less. If we are also talking about blocks I woould say air most definetly. I am not sure entirely about how minecraft is programmed, but I believed that if air blocks would be replaced by any kind of block we would be screwed.

I agree. Wood is the most important thing in Minecraft. Without it, you can't survive.
I find that the most useful item is gunpowder, because it can be used to craft TNT.
Ok, TNT can be somewhat useful but I doubt someone is gonna agree its the most useful. I have only used TNT about twice on survival just to level a hill. It didn't help much ._.
You get a water bucket by trading with villagers along with looting chests for a flint and steel, drown the endermen to death for a pearl. Follow a cave to get deep enough to find lava lakes, dump the water after you fill the middle with dirt so you don't end up making a wall instead of a portal.
Then in the other dimensions, who cares about stupid limits? Flood the nether's blazes and lakes, push the zombie pigmen off cliffs, drown the blazes!, then make a eye of ender, find the end, and drown all the endermen, drown the ender dragon, and drown notch, and the portal and the egg!

How are you gonna cook those ingots?
