Dirt/Cobblestone:Making quick bridges/filling lava when mining, filling in creeper holes, making barriers around my house.
Sand: Used for glass.
Gravel: Suffocating mobs, flint for arrows/flint and steel.
The rest either gets chucked down a lava pit, or down my trash chute.
I used my extra cobble and dirt as an excuse to build two big storage rooms... worked perfectly !

Please tell me you have lava usually in that glass pillar in the middle there? Would look pretty sweet. Actually looks pretty sweet as it is.
For me I just store it all. I have no need to make arrows as I have a mob farm and usually use infinity bows (still got 5 stashed away...waiting on getting more unbreaking books).
Cobblestone gets put in chests until I have 3 double chests full, then it get's cooked to smoothstone then to bricks and then either used to make buildings or stored.
Gravel I have 3 or so double chests full of atm with nothing to use it for besides filling lava lakes or for when I find an ocean to build a new mob trap.
cobble is usually smelted into stone and then crafted into bricks, dirt is just to plug holes or build quick towers...gravel- flint fil in lava pits/nice looking paths

as some said above, you should put lava in that pillar.
