The biggest thing I have ever built was a massive cactus farm on a Factions server. It 60x60, and 128 blocks high. My friends and I used it to generate in game currency. It took me almost a week to build. I know it probably seems like I should have been able to build it faster. but we were repeatedly raided throughout the week.
Made an island once. 100m in diamater so it was large enough to show up on map, this was one of the maps before they got redone and you could zoom in. Shame it got deleted
Build it for a challenge that I was doing at the time, collected all of the wood using only wooden tools and collected the wool by killing close to 400 sheep.
I have actually did things that took more resources than that but either I never finished them or they were something that was to make traveling in the Nether easier.
