New versions do not always have everything from old updates; I will never play 1.7 or later without modding the game (and never have actually played 1.7 or later in any case); for example, I recently found this cave (note the sunlight/snow and lava, and no, there was no ravine overhead. Note that this is not representative of every cave, which can get larger but also have more variation, 1.7 actually doesn't have much less air underground):
Even the biggest cave that I explored in my recent modded world, and among the largest that I've ever explored with 1.26 million air blocks over a 300x300 block area, took less than 5 days to explore, during which time I mined more than 12,000 ore and used more than 5,000 torches:
While the above is not directly comparable to vanilla due to the fact that the individual caves were so much larger (volume increases faster than exploration time/ores mined/torches used), here is a day to day sequence of caves I explored in my vanilla first world, with a similar amount of ores mined per play session (averaging about 3,000; I only explored a bit more on the 5th day above):
An Unmined rendering of the same area at different layers:
Mojang could have also spent a few minutes (literally) to add customization but no, they have to add silly things like colored beds and parrots (almost nothing that has been added since 1.6 interests me, even most of the content that I've added to my "personal" version, including some features from 1.7+, I do not see as necessary). Of course, you are not forced to upgrade and I've never played multiplayer (pre-1.7 multiplayer doesn't even work properly anymore since the new launcher does not correctly pass a session ID to the game; the game itself thinks you are not logged in, though it doesn't matter for singleplayer) so there is no reason to complain.
Indeed, soon I'll be literally playing a different version - the title screen of 1.13 will probably say "Minecraft: Java Edition" while I'll still see plain old "Minecraft" when I start up my game (not that they are different versions):

Playing Minecraft is our chance to escape the reality and mundaneness of everyday life, if only for a little while.
As some others have said and voted, I went with 1.7 (1.7.10) because of the largest number of mods available for this version.
I've been playing modded since 1.2.5, and since that point with most of the mods that Direwolf20 has been using in his single player series. I've played a bit with the Magic Launcher and Tekkit, but as of 1.4.7 and later I have used the FTB Launcher, which I have found the easiest to customize which mods to play with.
I do still have my old vanilla worlds, but these have a few mods in them as well, such as Single Player Commands, WMLL, Optifine, and EnchantView.
New versions do not always have everything from old updates; I will never play 1.7 or later without modding the game (and never have actually played 1.7 or later in any case); for example, I recently found this cave (note the sunlight/snow and lava, and no, there was no ravine overhead. True, but I don't really consider overhauls when I say "everything from an older version". Because it's completely overhauled. Yes, THAT cleared it up.

If you'd like to talk with me about other games, here are a few I play.
Team Fortress 2
Borderlands series (Borderlands 2 is my favorite game, ever. TPS combat is a lot of fun and makes up for the lower-quality story, in my opinion)
Elder Scrolls series
Warframe (IGN is something like That_One_Flesh_Atronach)
Pokémon series (HGSS forever)
Rocket League
Fallout series
Left 4 Dead 2 (Boomer files always corrupt though)
SUPERHOT (SUPERHOT is the most innovative shooter I've played in years!)
Dead Rising series (Dead Rising 2 is one of my favorite games, and the 3rd was a lot of fun. 1st has poor survivor AI and the 4th is bad)
Just Cause series
Come to think of it, I mainly play fighting-based games.

I'm not casting a vote in the poll, because, well, I'm too new yet, to the game. I only have play experience on 1.11 and 1.12. Also, as some have posted, there are earlier versions with a high degree of mod support, and I haven't even BEGUN to check them out.
I do appreciate to a degree the new features in 1.12 over 1.11, but I agree several of the changes seem really un-interesting (to me).
It is very interesting to see what those of you who have been playing for a while, think!

1.7.10 is the best version of Minecraft because of the huge amount of high quality mods available/
The ability to mod the game is what made Minecraft so popular in the first place. People just loved hacking into the jar file modifying classes and other people loved to use those hacks to play a modified game. I remember having to patch the jar manually then later modloader and even later forge came around.
For every feature 1.7.10 doesn't have there's a mod for it.
There are a lot of changes brought by 1.8 which made modding a hassle so a lot great modders left the scene and only a few returned briefly for 1.10 or 1.11. All the features added in vanilla since 1.7.10 pale in comparison with what the mods can offer.
Instead of embracing the modding community 1.8 in fact killed Bukkit made forge mods more difficult to always play a game of catch up with the faster release cycle of Minecraft and with the aquisition of Microsoft the game is about to move away from java, from forge and are creating their own visual only mods.
There are mods in 1.7.10 to make it like 1.8 and 1.9 or even like 1.10 and 1.11. While not all features are available like dual wield or shields is possible to install a mod for that too. In a sense 1.7.10 already had everything that was gonna come out in the next 5-10 years!
1.12.2, because some guy updated Balkon's Weapons to it, so I can finally storm Woodland Mansions with a pair of flintlock pistols, a musket, and a halberd.
Features, to me, don't necessarily dictate which versions are the best. Rather, I like to look at performance and how the game behaves. I always update to the newest version, but never upon its release (I usually wait a few months for the immediate bugs to be fixed in a patch). Yes, all the colors added in 1.12 provide more options for building, sure, but at what cost? The game is constantly changing its framework - I find myself constantly patching old projects in my world after each update because they tend to break or some physics change as a result of other code alterations. The 1.11 and 1.12 updates broke a lot for me. I'm all for change, but only if it doesn't threaten the work I've already done. The point I'm getting to is that while 1.13 looks great in terms of content additions, I won't update if the framework changes break my worlds. What then would be the point of updating?
With that, 1.8.9 was the most stable for me. Even today, in 1.12, I don't think I've used much of the new blocks for building added since 1.8; they weren't to die for. Besides, I think there is already too much content in the game - after all, I have yet to use most of the new things added between 1.8 and 1.12.

LP series? Not my style! Video series? Closer, but not quite. Survival journal, maybe? That's better. Now in Season 4 of the Legends of Quintropolis Journal (<< click to view)!! World download and more can be found there.
I came in during Alpha, man it was the best. Notch is great, nothing ever bloody worked, but that made it special. I only regret that the new launcher doesn't allow for pre release builds.
Edit: I may be newly spawned but that's because I never saw the point in the forums.
QUOTE (which didn't work right for some reason) " I only regret that the new launcher doesn't allow for pre release builds."
I does. I'm playing 1.13 pre1 right now. I've been playing 1.13 snapshots all along.
As for the best, like I said before, the newest release is always the best. I'm not a big fan of being stuck in the past or falling in love with less capable version because of "nostalgia". Give me the latest and greatest. Always. There's no way I would give up the spectacular new ocean features. They rock!

Personally, I prefer the newer updates, as I do not use mods (apart from optifine) it has new and interesting blocks, items and mechanics, like concrete, elytras, swimming and more. I also like the new combat system, introducing shields - incredibly useful in both early and late game and sweeping attacks - amazing for xp farms and dealing with hordes of mobs efficiently.

I always think the newest version(s) is/are the best. You get everything from old updates, with new things.

TheMasterCaver's First World - possibly the most caved-out world in Minecraft history - includes world download.
TheMasterCaver's World - my own version of Minecraft largely based on my views of how the game should have evolved since 1.6.4.
Why do I still play in 1.6.4?
1.6 because I like to explore more caves and mineshafts. 1.7 has less caves and mineshafts.
Newest is best. I can't think of anything in 1.12 that I'd want to give up for the sake of playing an older version.
But then, some people get a kick out of driving antique cars, so there you go.

1.8 for multiplayer because I hate 1.9 pvp.
1.12 for vanilla single player because it has the most features.
1.7.10 for modded minecraft because it has the most and best mods available.

It's a big fight between 1.7.1 (After potions, before rabbits)
Or 1.9. When you still had to crouch to sweep attack. It felt a lot more tactile.

1.13 is easily the best. Far and away.
Coral and turtles, need I say more?
The BEST way to mine diamond, layer 12 and you.
1.12.2, because some guy updated Balkon's Weapons to it, so I can finally storm Woodland Mansions with a pair of flintlock pistols, a musket, and a halberd.
We're doing a mod project, check it out:
1.7, because it's the latest version that my machinima movie making mods will work on.
