I'm looking for a way to get some Ender pearls quickly. So far the quickest way I've found is to head out to the desert, wait for nightime and slash away at Endermen. There's gotta be a better way though, right?

Craft a boat, and place the boat next to the Enderman that you see, thn he will ride the boat like the image and all you need to do is, kill him >:D
He will not deal to you any damage, so that why the boat is important.
I made 3 stacks of enderpearls with Looting 3, if you don't have a weapon with Looting, I think you will do 10 enderpearl each night.
I recommend to have a horse to travel faster, search endermans and kill them very quick.

Build a darkroom mob grinder that can trap endermen as well. There are some great designs from Mumbo Jumbo, Snocrash and others on youtube. I made my own by combining features of farms by Redstone Jazz and Snocrash.
I made a modified version of this farm by Snocrash:
Using the single block flushing system from this design by Redstone Jazz.
I made my farm slightly larger with a larger drop area, and I use magma blocks and a hopper minecart at the bottom to collect the drops. Here's a picture of the test version in my creative world (still haven't finished building it in survival, yet).
An Enderman can teleport up to 32 blocks along each axis (64×64×64 cuboid centered on their current position). It then seeks downwards from the chosen destination (any distance), so you have to eliminate anyplace they can teleport to keep them trapped in the farm. The roof of the farm is covered in double carpet to block them from teleporting up there, and the only place they can teleport downward is to the magma block kill platform (which will kill them anyway). In a normal survival world you would have to eliminate caves below ground as well.
This farm is only for drops (no XP), but it collects ender pearls pretty quickly (along with 14 other drops).

The buildings are kinda daunting. I hope I can gather the willpower to actually make them.
Honestly? I'd just kill them in the desert until you have enough to get to the End, at which point Ender Pearls will no longer be an issue. Either that or farm crops to trade for emeralds to trade for Ender Pearls, then go to the End.
Pillar up 20 blocks in a desert at night. Skeletons only shoot at you when you're within 16 blocks, so they shouldn't be much of a problem. Look at endermen from long range and they teleport to get closer to you. Endermen can only teleport within 16 blocks at a time as well, so they shouldn't be able to teleport up to the top of your pillar. Have a step at the base of your pillar about 3 blocks above the ground that you can climb down to via ladder, this will put you high enough up that endermen can't hit up to you, but you can reach down to hit them with a sword.
Bring a nice enchanted bow and plenty of arrows and target-practice on other mobs while waiting for endermen to spawn. Maybe put some widely-separated torches around to make it easier to see mobs that wander into the light, while still leaving plenty of dark blocks for them to spawn on.

Now past 1.16 update, best quick option is likely doing same in the Nether - lots of Endermen.
In most my worlds, I build a mob grinder where all platforms flood at once. And the only valid teleport area is the kill chamber. Gets me a nice pearl income.

Oh, and once you have access to The End, you can build one like this:
The one I built in my survival world only takes 3 minutes to fill a double chest with ender pearls!
I can get 1.5 to 2 double chests in 5 minutes.
The farm was designed by King_Ray here on the forums (Rays Works on youtube).
Half of the farm is built in the overworld at spawn (above) and the other half is in The End (over the exit portal).
I found it necessary to put the endermite in a minecart (otherwise I would lose him) and I added trapdoors so I could turn the farm off.
The slime block helps me hop up onto the ladder that leads up to the AFK platform.
Oh, and don't forget to name the endermite so he won't despawn!
Village clerics sell them for 4-7 emeralds...

Thanks guys. The goal was to get enough ender pearls to reach the end and desert hunting is what I ended up doing.

Place boats around you so the enderman will walk into it and they can't get out and you can kill them for pearls or use them for archery practice

yea but enderman take damage from water and if they touch water they will take damage and tp away

Build a wheat farm, trade with a farmer for emeralds and then trade with a cleric for ender pearls
