I have a mine where I mine a 2 block high shaft in one direction for like 500 blocks so far. I know its kinda short for now, but its a pain running out of torches and having to go all the way back. Walking. Rails might suffice, but I'm not sure if I have enough gold.
The wiki page on sprinting includes the fastest way to travel possible. Trust me, I tried it and I use it on many majorly huge builds. Even if I don't have a ready supply of potions it is still very useful.

What I did whenever I decided I'd mine 2500 blocks in one direction...
I took a few swiftness potions to get to the end and back
Sprinting and jumping down the whole mine shaft.
Then I started a normal branch mine because I didn't like wasting so much food.
Try Etho's method of using Swiftness potions in his mine. Never occured to me to do that untill I sw his episodes.
