The world is infinite. There is no way you explored all the caves. And if you have found so many diamonds make a XP farm, get a high grade enchantment set, and kill that Enderdragon. Find a golden apple in a dungeon. Set up a town. Go find a island, and live there.
Idk, make a crap ton of farms. Minecraft is kinda pointless..

I once wondered that same question, only it was worded differently in my mind... I took a break from minecraft for a few weeks and now I'm back on it and having fun again. Sometimes you need to just take a break from a game. Maybe you've worn yourself out from it completely, who knows. You should try taking a break and coming back in a bit. Although, if you don't want to do that, several people have suggested some good ideas already. I have several worlds that I created in the hope that someday I would release them to the public and everyone would love them, even though I'll never get around to it. It did give me something to do for a while though, and I have expanded my architectural talents quite a bit since then.

If you are into the technical stuff, like me, you can always play around with redstone circuits and try to make unique contraptions.
If you are into building, I recommend you start playing around with creative mode / single player commands + TMI.
