I started breeding villagers when 1.8 came out (then again, I didn't start playing MC until 'just' before)...
I now build/use UnaryBit's compact villager breeder (google it on YouTube) as a priority when starting a new world. On the MP server I play on, I built an OP Farm/Villager Mall with the following features:
* Enough crop production of all types that any one person couldn't possibly sell something out before it's replenished.
* Every top-tier book available for at or below 24 emeralds.
* One each of 1.8 trade-off villagers with 'perfect' trades (Cleric, 2 Farmers, Butcher, Fletcher, etc)
* One villager each, selling 1 of the following in UNB III:
- Iron Shovel
- Diamond Pick
- Diamond Axe
- Diamond Breast Plate
* A few 'special' villagers selling such like:
- Diamond Pick with UNB III & Silk Touch
- Diamond Axe with UNB III, Eff III, Fortune I
Mind you.. on our server, I've killed in excess of 1500 villagers to get the above selection. and will likely go through another 500 getting 'perfect' mending and Frost Walker trades.

Whom, I just so happen to know, has found so many villages he lost count long ago.
Though I'm a dirt-poor pauper compared to MasterCaver, my mineral wealth is so great that I would never bother trading anything with villagers. I only use perfectly-enchanted tools and armor. At any one time, I'll have three different diamond pickaxes in my pack. I sometimes even carry two or three swords since Sharpness and Smite can't be combined.
Worse, the villager AI is so dreadfully inadequate that I have no desire to protect them—not to mention I play locked on hard mode so wooden doors are of no use and they can't use iron ones. After watching one testificate run repeatedly into the outstretched arms of a zombie outside, then turn into a zombie and change the other two inside, I decided they were a lost cause.
For that same reason, I never tame dogs or cats, though I would enjoy doing so. If I could make them autonomously patrol a small area, much like iron golems, I would keep several around the castle.
MasterCaver, if I could turn you loose in my world for just a few days, I'd supply you with all the picks and torches you needed! I *just* started a new branch mine beneath the nearly-endless (large biome) extreme hills around Castle Midgard. It's all 1.7 terrain with none of the new blocks (granite, andesite, or diorite), I think.

Villages are yet another aspect of MC, something to explore, do with, experiment. After you put in the effort, you can get your enchantments way more predictably.
Finding them is probably hevily dependent on your video card. With strong video, you can set far render distance. Most villages I found, I spotted initially far off to the side. Would never see them on short render.
