Forests for one reason: I just like nature, and forests just seem like a natural home in the wild for me.
Plus I normally find them within plains, so I'm perfectly fine with them.

Finding a pond in the jungle is just satisfying, I always build a house with a porch next to it so I can look at the forest at night. Watch the zombies swim.
I love em all (except oceans hate them. Too deep to explore. Tried once) I'm really liking jungles right now, seeing as you can survive off a new type of house, and use shears for near anything. But my next fav is e mountians. Epic views and underground tunnels ftw

Are youbored of minecraft? It's not the new features. I'll give you a hint:It's the terrain generation. Go play a map generated in 1.7.3 or earlier, then tell me you don't agree.
I must admit I was torn when answering this poll. I eventually voted for jungle for two reasons. First, because that's where my primary base is in my current single-player survival game. Second, because it is the only biome I've seen and instantly thought, "That looks really cool I can't wait to explore it more!"
However, I admit to a lack of interest in exploring, so I've hardly seen every biome out there. I want to have an opportunity to make a large castle in a wintery biome. This has been a long-time goal I have yet to realize.
I chose 'love em all' because I have too many favorites to just pick one, but here is the top of the list.
I LOVE the new jungle biome. The massive trees are great for treehouses, Vines everywhere so ladders are almost unnecessary, the random water-source and often dynamic ground-levels make for a thrilling exploration. Currently in my fan fiction blog I am working with a jungle biome that is separated by a river from a swamp and a desert. The desert has a village in it and the jungle's caves always have exciting twists and dynamic features, such as vines dangling down into caverns.
I have a love for the swamps, especially when you can see them from a jungle or another biome. The dreary landscape and plethora of food and animal resources make it very friendly to the the survivor. Granted those lilypads are SOOOO annoying. Making it so they do not hamper boat travel would be a good next issue to correct.
Alongside my fan fiction singleplayer game I have another single player game where I experiment with stuff to do on multiplayer survival and generally just have fun. It is on an island in the middle of nowhere, too. At first I was going to scrap it, but that sensation of isolation is very liberating. Not to mention I go on boat rides to obtain renewable resources, like mushrooms and reeds.
Finally, I am a huge proponent of the mountain biomes. They can take a little getting used to at first, but the reward of working on a castle on a mountaintop then one day saying "Huh, I wonder what this looks like from the outside" and then going and seeing what it has all come down to? Psh, fogeddabouddit. So rewarding.
For me, the ultimate location to build anything, especially the type of epic-scale structures I go for, is on or close to the border of several biomes. In my multiplayer game, I am at the very hub of a mountain, a forest, a swamp and a desert biome. Within walking distance is a tundra, and a plain biome. Once the server is updated ( and possibly restarted for the 1.2+ updates ) I am going to seek a location similar to the one I have in my fanfic singleplayer.
Plains. It seems like a great place for home. Also, villages and trees spawn there. And cause I'm more of a surface dweller, I like to farm, and seeds are EVERYWHERE there.
I've always liked the Mountain (or, if you go by the official biome names, Extreme Hills) biome. Must be my fascination with the hills and valleys, and the fact that I like carving my home into the side of a mountain. Not to mention it's far better than boring forests.
Mushroom biome! I love when I find a mooshroom, and making it follow me back to my base is fun! And sort of worth it. (Unlimited, untimed food source) And mycelium is cool
Desert. I dont know, it just feels comfortable. I mean, it has every thing you need. Since it is the desert (for me I find more dungins) you find more dungins so, if your lucky, you can get some sticks and iron. And you can also find a village and tear it down. Oh yeah, SCREW WOODEN HOUSES! Make a sand stone house, I think they look nice. =)
I like deserts. Nearly all villages I've found have been in deserts. Not to mention cacti (a good wall) and sugar cane (books for enchanting) being plentiful here.

Jungles are absolutely amazing. They have massive trees and lush undergrowth (ferns, tall grass, and bushes) a new type of leaf with a potential for a new food source, as well as a biome-specific mob, the ocelot.
