if I can, I bait them to someplace where they'll be on a roof over me. They can't fall through a 1 space opening, so wedge yourself in someplace, and attack them from there safely.

When you hold down the button to spam attacks you are actually just attacking every .6 seconds. Obviously this is a big enough window for a spider to lunge at you without getting any sword to the face. Because they jump the timing to hit them is a bit different (you have to be more precise about when you click) but with some practice you should be able to do it fairly reliably.
Or if you don't like that then plant a cactus doorway. Just walk between them as the spiders can't get through a 1 wide gap. They will sometimes climb cactus so turn around and actually knock them off of it with that sword you're lugging around, or even just punch them off.
Or you could place a block in the way so if they climb they get stuck under it and actually die to cactus.
Bow and Arrow, man. If you aren't good with one, learn to be. It'll save you from many spiders and creepers. I've gotten to a point now where a few days ago I was in our SMP world cave exploring, I was accosted by two zombies and a spider, and I killed all three without missing once. I. Felt. Awesome.
Seriously. Find a skeleton or a zombie spawner if you can, turn it into a mob grinder, get their feathers to make arrows, or get their arrows and bones, and fill up with about 2 or 3 stacks of arrows. This'll be more than enough. Each mob only takes 5 hits from arrows (each arrow does 2 hearts damage, each mob has 10 hearts). Just remember that every time you hit a mob, they are invulnerable for a second while they're taking that initial damage, so doing a volley of arrows just wastes ammo. One at a time, carefully aimed. They also are knocked back slightly. This can keep them in place with the arrows if you time it right.

I don't know what I'm doing wrong, but I go after every spider I see, because for me they are just about the easiest thing to kill in Minecraft. A few whacks with an iron sword and they roll over. I have a spider dungeon that I walk into when I need some more EXP. I just step in and start whacking, and never die.
P.S. I don't do armor.
Try what I did to learn how to kill them. Go out at night with a wooden sword and no armor and go after every spider you see. You'll get killed over and over, but after a while you will learn how to kill them every time with nothing but a wooden sword. Then you're ready to take up your iron sword and never fear spiders again. You just have to learn how to battle them, and you MUST learn that the hard way by getting killed a lot of times.
Sharpness V diamond sword + critical hit + spider = RIP (spiders have 16 health, this deals 18.25 damage, just enough to get "Overkill", and it is indeed overkill).
Also one-hits cave spiders without critical hits; in every world I've ever had I've made a Sharpness V, Knockback II, Unbreaking III sword named the "Monster Slayer", with well over a hundred thousand kills to its credit overall.
A diamond sword - even unenchanted - is also very useful against silverfish - one hit and they are dead without alerting others. IMO, Smite and especially Bane of Arthropods are only there to make it harder to get Sharpness, the most desirable enchantment, same for Protection on armor (I wear a diamond chestplate and leggings with Protection IV and Feather Falling IV boots; the last time I died was on April 26, 2014; and this is mainly to ensure that creepers can't one-hit me; as you can guess, that death was from said overpowered mob).
PS: How long as it been since 2011 (check the date of the OP)?

Jump and attack it while falling. With a diamond sword that way you should 2-hit it.
