Problem
With the current healing system, you'll heal every heart of a food items healing capacity, instantly. If you would stack food using this system, you would be invincible from damage that doesn't take all 10 hearts until you'd run out of food because you could just spam-eat all of it.
Solution
Health-ticking, in "peaceful"-style. When you eat, your health will go up half a heart each tick. It stops when it have healed every heart of it's healing capacity, when you reach full health or when you get attacked. If you eat more during the ticking, it will add to the amount of ticks it will make, not tick more often.
Consequences

I like that you can't carry around a ton of food. Every piece of meat you bring is another square of inventory that you can't use for something else, so how much food to bring is a real choice. If it stacked, you just take an entire stack of food, and you will never run out. There is more to food not stacking that preventing heal-spam.

What about limiting the capacity of a stack, just as Notch did with snowballs, to a number much lower than 64?
That would be better, but I still don't like the idea of carrying around enough spare health to heal fully 20x over. A single stack of 8 pork chops is enough to heal you completely over 3 times. Stacking to 4 is still well over a full heal per stack, and stacking any less than that isn't even worth a stack. I have no problem with the slow health regen; I actually like that.

Maybe I should turn this more into health regeneration and not food stacking. I just thought the problem with food stacking was instant full healing.

The problem is having an endless supply of health you can afford to waste like any other resource rather than treating it like it's your lifeblood. I don't like the idea of regeneration either though. It slows down the game and encourages hiding to heal rather than playing with skill to avoid getting hurt altogether (there is probably a gaming term for that, but I don't know it).
