I love the taming the wolves and having their help with fighting mobs. It would be nice it you could train the wolves to preform specific tasks like retrieving items, guarding an area, warning of mod approach, hunting non-hostile mobs. A tame wolf should be able to be trained to perform one task only. I was thinking that you need to create a specific tag that when given to the dog would train them in the tags skill..

I suspect this is more mod territory than vanilla, but it's a fun idea.
I imagine having several of simple commands you can give to whatever tamed wolves are in the area and not sitting, like attack, stay, retrieve, and guard. It reminds me of the escorts in Ambrosia's Escape Velocity (...good times!).
Inspired by the other threads you should have found before posting, I like the idea of using experience to add to a wolves utility (command-ability). I also think it's a clever idea to use "music" to command wolves. While I think the actual note-block idea is too clumsy and off-beat to actually work, what if there was a dog whistle item you had to craft (or make it uncraftable and something to find in dungeons). The dog whistle be the tool to use experience on the dog - like the crafting table, but you click on a dog with the equipped whistle. Then when you want to give dogs command you right click with an equipped whistle on nothing and you get an interface to set all dogs in range to whatever mode.
