I love Easter Eggs, so I support fully. It'd be cool. You know how some people keep the mini slimes as pets? Well, you could use name tags on them, and then toss them helmets, skulls, or a pumpkin, and then they'd be custom little slime pets.It's just funny, and that's what Easter Eggs are usually about. So, as stated before, Full Support.
Having a better slime would be cool, especially in adventure maps.
maybe you could make it to where if a slime egg is in a anvil then you put the helmet or skull in the other slot you could have a slime spawn egg without nbt edits!

Maybe. I'm not going to add that to the main post simply because I'm not going to push this suggestion harshly in one direction or another. I don't want to put too much into recipes, etc.

Why confuse new users if they see this in-game, and they think the slime is wearing armour, when it is in actual fact just a texture?
It's an extension of the texture - they are wearing armor, which is just rendered a bit differently. It wouldn't just be mashed into the slime texture, but rather applied to the outside of it, on a new box slightly outside of the slime.

I do have to wonder, would it be possible to substitute the pumpkin with a Jack o' Lantern? If that's the case then a slime wearing one could have an awesomely creepy glow of some sort at night, like the eyes of spiders but with a yellow hue.

They wouldn't all have helmets. The probability of a slime spawning with a helmet is about the same as a zombie spawning with a helmet.
