OK, in my opinion farming is really kind of boring.
Now that it takes six things of bone-meal to grow your wheat it is irritating to me as well.
Because of this i propose some changes to the way current plants work.
Not new plants, just changes to the current ones.
Wheat
Wheat can be a diploid or a polyploid.
This means that it can have 2 to 6 sets of chromosomes.
With this i propose that there should be different types of wheat.
Lets go with diploid. (Two)
This would represent the two plants;
x-x-x-x-x-x-x
y-y-y-y-y-y-y
But if you took biology (Or practically any other simple science unit)
You know it looks more like this;
X-X-X-X-x-x-x (X4x3) I think...
Y-Y-Y-Y-y-y-y (Y4y3) pretty sure.
Now if you paid attention in those classes then you know they look more like this;
X-Y-X-X-y-y-x
In the above sample the big x is dominant, correct?
I honestly wouldn't take it this far,
i would have 4 different species of diploid plants, (Big x is dominant, Little one is recessive.)
a ) X-X-X-X-X-X-X
B ) X-X-X-X-x-x-x
c ) X-X-X-x-x-x-x
d ) x-x-x-x-x-x-x
X = More wheat, Needs more light (Light level 9 or more to mature) (Without bonemeal)
x = More seeds, Needs less light (Light level 4 or more to mature)
A ) would give 4-6 wheat but only give 1-2 seeds.
Good for mass production, But gives very few seeds. As well as needing a lot of light.
B ) would give 2-4 wheat as well as giving 1-3 seeds.
Good for overall farming giving a surplus of produce, Needs around light level 7.
C ) would give 1-3 wheat as well as giving 2-4 seeds.
Good for overall farming giving a surplus of seeds, Needs around light level 6.
D ) would give 1-2 wheat but gives 4-6 seeds.
Good for starting a farm, Needs around light level 4 to mature.
The coding for plants growing would have to change because there are now 4 different species of wheat.
so lets start it at the breaking of the grass.
When a grass block breaks it has a chance of giving seeds, yes?
So lets make it a 25% chance for all of the seeds to come out, if a seed could come out.
There would be no visual difference in the seeds (Post if there should)
When it grows we might be able to have it check the area around it (2 block)
And find other plants.
If other wheat plants are there then it has a higher rate of being a dual. If not it will choose between Dominant and Recessive.
Carrots
Carrots are easy actually. they would apply by the same genetics as the wheat but this; A-B ) Would have orange carrots, and breed orange carrots unless other carrot plants are within a two block radius (Other carrot type would not matter) C-D ) Would have yellow carrots, and breed yellow carrots unless other carrot plants are within a two block radius.(Other carrot type would not matter)
Coding
Coding would be the same as the wheat, other than the fact that there would be two types.
Potatoes
Potatoes grow better without light...
So maybe their mechanics should change almost entirely?
Bonemeal
Bonemeal would be another variable to the plants,
a simple one.
When bonemeal is applied it increases the growth variable by increments
but it will switch the gene variables.
This is a sort of shock applied by the forced growth.
So Type A can change to type C or D.
Would probably require a rewrite of the bonemeal .class
It would lay a different situation for different plants.
Not particularly...
I only showed implementing really a Uniploid plant.
Much simpler than a full fledged diploid (XxYy)
This would add more difficulty and slightly more realism.
With this you could easily grow bigger batches of food without need of many plots.
I didn't say that they should be entirely different species.
That's what I mean! You may not find this complicated, but it is. Though realism is sometimes good, minecraft doesn't need to be realistic like this! It just needs to be fun.

Growing plants the way they are now seems boring.
No offense, but the last thing that I would change would be growing stuff. It doesn't seem important enough to get this much detail.

It is the perfect thing to change. The last change to the growing part was when?
They added that bonemeal didn't work as well, okay... So why not change the entire thing?
Why shouldn't there be ways to make your farming better?
Sure mob farms. Oh yeah love the new mobs. Horses bah i like pigs.

I wasn't meaning for the wheat to be visually different.
But the different items would contribute to being able to propagate just one type of the species.
