Why not? It was the quickest way to brew potions now cauldrons basically have no use except for erasing leather color. I think the brewing stand is just a dumb idea because you need blaze rods and im not going to the nether just to kill the most annoying mob in the game to get a blaze rod and make a brewing stand. It was also good because everytime you put something random, there would be random affects which is good because its just dumb to use certain items to make that certain potions. Now the brewing stand just takes an hour for you to make one potion when cauldron brewing take atleast 2 seconds to get the potion you want.
First of all, in order to make anything beyond a Weakness Potion, you'd need to get nether wart. Might as well kill a blaze while you're there. I always viewed brewing, along with enchanting, as mid to endgame content anyway, meaning that a player would've more than likely already found diamond, created a nether portal (barring the lava-in-a-frame trick), and survived long enough to find a fortress. I don't see potions really being useful unless a player has already reached those milestones to begin with.
So were this implemented I can see two possible things happening:
-Cauldron brewing gives out random potions a la Enchanting, and a sizable uproar occurs directed towards making it consistent
-Cauldron brewing uses the current alchemy recipes sans nether wart, but that would end up making Nether fortresses nearly useless.
Either way, I don't see how it would work, at least in the form that you're proposing.

Not a very good supporting point there. "I don't feel like going to the Nether." I don't always feel like fishing when I want to tame some Ocelots but I gotta do it anyway. Unless I happen to find Emeralds and I happen to find a villager who sells them.

Yeah, constantly saying something is "dumb" without explanation won't help us take your side. Cauldron brewing wasn't removed by accident. Players want a definite potion effect to go for and not get boned with that random crap.
If I throw in Blaze Powder, I expect Strength. If I throw in a Ghast Tear, I expect Regeneration. This suggestion is pretty just based solely off of your opinion and a bit of laziness.
Brewing stands are compatible with Hoppers, meaning automation, like what Chockrit did.
It has been confirmed by Dinnerbone that comparators will at least be able to detect how full a cauldron is. Personally, I'm a fan of making cauldrons store potions. I used to like the idea of cauldrons being area-of-effect items, so you could have "speed zones" and "health zones", but the beacon has this feature, so it's possible for these to be made easily using NBTExplorer, and I don't want a copy of the beacon block.
Point is, there are much better suggestions out there than cauldron brewing. That method was clunky, complicated (even more so than it is now), and unreliable.

I don't see what is so bad about the current system. With it we get consistency, reliability, and simplicity. None of these are bad things.
Also, the way the OP describes the current system is irrational, to the point where he just exaggerates and makes things up. If you can't give real and accurate reasons why something is good, why should we change it to something you want?
