I think it would be awesome if chickens were freaking evil like in Legend of Zelda - OoT. I mean, in OoT, they were more overpowered than the freaking final boss!
As for custom behaviours... some really cool ones in maps would be things like;
"Patrol" - making mobs patrol constantly in a customized area (and not despawn)
"Stand Ground " - A mob will stand in a certain place. It could also be given a custom chase range, and until the player entered that range, it would not move (range of 0 = would never move).
For example, we could have a map with a castle that the player has to conquer, whilst dealing with the army of skeletons, Pig zombies, and so on, that are guarding it. Similarly, snow men could be made to stand guard against mobs at the gate to a village or city, and so on.
The downside - it might be hard to tell mobs the specifics about when to move, where to patrol, and so on.
If this made it easy for me to change how my mobs generate, I would love to have skeletons with a chance of invisibility and creepers with high blast resistance in my worlds.

Immobile zombies would make great NPC's. Or an amazing Pokemon map.
There should be a "tameable" tag that makes it so if you feed that mob a set item, it might be tamed by you. This would allow for PvP where each person has tamed creatures fighting for them. 'tameChance' would change the chance of the mob being tamed (so you could auto-tame wolves, for example).

Support. However, for mob to mob interactions, allow name to be used as a defining feature (so that you can have allied mercenaries fighting (which otherwise count as armored zombies) to help fight off the zombies so that the player can get to the escape minecart.
Good news! At least a little bit, there is now a "disable AI" NBT tag for all mobs as of the recent snapshot. Disabled AI mobs will not respond or act in any way or manner.
This is looking goof for future AI updates, and you can already do a lot of things with the disabled AI tag.

I'm too tired to hunt down my previous posts on this subject, but I am utterly in favor of it. Between resource packs, custom maps, and AI choices, the combinatorial possibilities - even before you start adding mods to the mix - are mind-boggling.
I think the bit that first sparked my imagination on this topic was the thought of a space pack that had peaceful eight-legged Space Cows and will-not-stop-until-you-are-dead Terminator Space Chickens.

P.S. Would be nice to be able to alter which sounds go with which mob. So villagers could be silent and there could be mooing spiders and clucking endermen or whatever.
