I don't know about anyone else, but I'm not too fond of the pumpkin that sits atop every snow golems. I do know some people do like it, so I'm suggesting a second type of snow golem that doesn't wear a pumpkin helmet.

It would use the same texture as snow golems with pumpkins:
How to make one:
First you would have to make pebbles. Pebbles can be made by placing gravel in the crafting grid (one gravel yields 6 pebbles):
Next, you craft a snowman head with a unit of pebbles and a snow block (shapeless recipe):

It would also be wearable:
To make the snowman, just simply place a snowman head on top of two snow blocks:

Snowmen wearing pumpkins would be changed to not attack endermen.

Snowmen that aren't wearing pumpkins would also have slightly better accuracy than ones that wear pumpkins
I'm fairly neutral towards this (though it does border on adorable without the pumpkin head).
One thing I take issue with is the use of "pebbles". It seems like an unnecessary middle step and an otherwise useless item.
Maybe you could just craft the snow with gravel, or even with a piece of charcoal or coal.

Pebbles are a great idea. Because they could be added for other use as well. (Sling bullets....) However, I do see your point about using some charcoal instead.
I like this idea, although re-skinning the snow golem yourself might be an easier step.

Nope. Not possible without mods, or making pumpkins invisible. I used MCPatcher to get the pumpkinless snowman for the pictures. In vanilla Minecraft, snow golems use the pumpkin texture in the terrain.png for their hats.

To be honest, I was not aware of that. I haven't tested the snapshots myself, as I've been testing a mod for someone. Good to know.

I think they definitely should be able to do something that regular snow golems can't. Otherwise they seem like a meaningless aesthetic addition.
Perhaps they would take damage in sunlight light levels, but heal while walking on top of snow blocks (not snow), and they attacked regular snow golems on sight (kind of like a constant war between the two). It would be amusing to watch at the very least.

But you can wear skeleton, human, wither skeleton, zombie and creeper heads, and that makes no sense. Also, they do nothing useful, unless you somehow enchant them with a mod or hack.

I like this idea. Snow Golems with pumpkins already attack endermen, but maybe they can be changed to not attack them, and pumpkinless snowmen would.
