Run : Press Shift to run faster for a short time. Running decreases Stamina. (You can swim faster in water by pressing shift)
Jump : Higher jump for holding the Spacebar longer.
Breath : Stay under water longer, each stat adds 1 second.
Defense : Damage taken from being attacked decreases.
Attack : Damage for attacking will be increased
Strength : Increases digging speed and attack. Attacking decreases stamina also
Dexterity : Increases arrow accuracy and attack.
Stealth : Increases ability to sneak around mobs (In Multiplayer you will appear as a ghost if you are sneaking).
Stamina : Gives you the ability to attack and run. Eating will replenish stamina, standing still will also replenish stamina. Each Point adds 3 points, so you can have 15 + stamina. Attack removes 1 stamina per attack, and running removes 2 stamina per second. If stamina is 0 you wont be able to attack or run. Increasing this stat also increases the speed stamina replenishes when standing. To start, its 1 stamina per half second. + 1/2 stamina per second for every rank, so at rank 5 it will be 2.5 stamina per second.
Thats all i came up with.
Max for increasing any stat is 5. Along with Adding stats, you can also delete stats. Deleteing a stat gives you that 1 point you deleted and you can add it to another stat.
5 is a good number so that people cant 1 hit monsters.

If we have a progression system at all, I don't think points should be awarded only for killing things. Perhaps mining and building, planting things, all kinds of stuff could give experience.

Maybe experience points aren't the answer. If there were an achievement system in place that granted bonuses every time you accomplished something, perhaps? (id est: Successfully Smelted Ore, Killed 50 Skeletons, Survived 100 Days, etcetera).
