An ice block. It would look something like the glass block, but it would be blue and slightly less transparent. You would slide on it if you're on top of it.
Snow blocks. Just like grass on the dirt blocks, only snow. Also, I think it would be cool to be able to make those grass blocks, so you don't have to wait for it to grow.
Some kind of teleport block. Maybe it would be like some shining purpleish thing, I don't know, but like if you touch it you would transport to the other block. It might be hard to do, if you wanted multiple teleport blocks in one level. But if you could pull it off that would be awesome.
Light blocks. It would light up a small area around it. To make this have a greater effect, you could make caves and places were no light gets to darker.
And maybe a ladder block. It would look simply like a ladder, and if you're in contact with it and you hold space you go up. I'm tired of making giant winding staircases.
A few other ideas, there should be like dummy/trap blocks. They look the same as any other block, but if you step on them, they break. You could make traps and stuff with this.
A way to kill mobs. Seriously it's so easy to accidentally hit G, and then you have a mob running around your map. And maybe I don't want it there.
A better way of preventing flooding. Maybe an undo button, a way to stop the physics of water before it floods your cave or whatever, just something. I know it would probably be hard, but it would be so awesome if you figured it out.
Fan Block : Available in horizontal and upwards forms. Horizontal fans impede horizontal movement, obviously (but don't stop it.) The upwards fan allows people to fly upwards on the air flow until they hit a ceiling or walk off the current.

Crumbly Stone : Looks like normal stone when placed, but when you step upon it, it will turn into gravel and collapse. Thus, it will only function as a sort of trap if it's suspended over a pit.
Also, a more realistic solution for water removal and filling:
Pump Block : When placed, the pump block will begin to drain water from a room or area. Will only work in a small area, though. You cannot drain the ocean using a pump.
