As it stands now, Endermen just go about their own nonsensical business - wandering, looking at stuff, examining this interesting block they just found - until you look at them. When that happens they freeze, turn to face you, throw open their maw, and shake. Look away and they'll teleport to you and attack.
Creepy stuff.
But when I see an Enderman stroll by a couple pigs who give him the stink-eye... nothing! What? Those pigs looked you up and down and probably insulted your mother in oinkish, but I accidentally glance your way for a second and suddenly you're using my chest cavity to warm your hands? How does that make sense? What makes me so special?
The short of it is, I think that Endermen should react the same way to any non-Ender creature as they do to players. It would help make them feel more alien, as opposed to just anti-human. And you'd also have to worry about them getting into your chicken coop.
And, let's face it. Every time one of those freaky sheep gives you a wall-eyed stare, you feel like attacking it too.
Though Skeletons should be exempt (unless they hit Endy with an arrow.) I figure their empty skull would act the same as a pumpkin hat.
So if a creeper looks at one there will be a big hole in the ground without the player even being able to prevent it. Now think about all the creepers that would look at endermen.

Well, wolves are smart enough to not attack creepers. Maybe Endermen would know not to as well?
I like this idea! However, I think it would be problematic. Endermen would quickly--maybe within the first couple nights--completely OBLITERATE every animal on the chunk, which would make farming way too hard.
They would also make the night too easy because they would destroy all the other mobs too. To make it balanced, here's my logic:
Animals should be ignored because they're not sentient. Endermen shouldn't care what some dumb animal thinks, right? XD And the other monsters don't really have eyes: Skeletons, zombies, and creepers just have empty holes in their heads. Spiders and wolves are also animals, so they're exempt too.
BUT...Villagers/Testificates ARE sentient and they DO have eyes, so they shouldn't be safe. If their head "snaps" to an enderman, they should get attacked. If the villagers are improved like I hope they'll be (fight back in groups, respawn in villages, etc.) this should make things a little more interesting.

Testificates should also not look at endermen 75% of the time. That way, it would be like the villagers would be trying to avoid being attacked.

I didn't mean to suggest otherwise. They would not attack anything unless it first looked directly at them.
...Unless you meant the emphasis of the sentence to fall on "you", meaning only the player could enrage an Enderman? (ie, just the way it is now.)
