If this was actually a feature to make your own paintings... griefers would draw male genetalia all over the paintings.
And normal people would remove and burn them, then ban the griefer. It would be much easer to deal with then normal griefing, so I don't see a problem.
Will you be able to customize larger paintings?
I would really like to make a fake wall that isn't obvious.
and
What kind of durability will option 1 have?

There could either be a way to frame paintings
(ex. Iron and glass)
Or a log of who edited the painting
(no idea how that would work)

Yes. The size of the custom painting would be the size of the normal painting you clicked on.
And the option 1 palette would be able to edit a painting 4 times, where the option 2 would be infinite.

I think if you don't wan't your paintings to be messed with, you should hire a guard or put it behind glass.
Oo, interesting! I think option 2 for painting is the best. And I have some ideas (not that you have to use them) for the art of literature:
First, you need to craft a book. Then, get a feather and some black ink. Now you have all you need to create your first book. When you left-click on the book, a little page opens up. You can type text in, much like signs. Press the right arrow key to go to the next page. Press the left arrow key to go to the previous page. Each book randomly has 30-100 pages. When you finish typing your book, you could press the "finish book" button. Now your book is ready to put in a bookshelf! Left-click on the bookshelf to take a book. Bookshelves would be crafted the same way they already are, but they don't need 3 books. Example ( = book):
[]
This bookshelf would have 2 books in it. When you destroy the bookshelf, you will get the books back.
Just some ideas!

If you can't count up to 2,047 on your fingers, you're an idiot.

And with my colored cakes suggestion (which I see you also support), you can have a bigger menu!
Oh, and I fixed your sig:

This was a triumph.
I'm making a post here, huge success.
It's hard to overstate my approval.
