The cave update would be nice with the dripstone (stalactites) stuff being added to make them look much more interesting.
But the big game changer here is the increase in height limit which presumably would affect the terrain generation, if Mojang chooses to do something with that extra space. It means both the subterranean environment and the mountains could be bigger and have more resources to mine.
and who doesn't want to build a sky temple with its rooftop at 512 Y altitude? 256 Y was too short and we're finally getting an increase after all this time people petitioned for it. It could increase the amount of grind time, but if there are more rewards to be had then this is well worth it imo.
I'm not expecting everyone's gaming device to do ray tracing, but at minimum they should be expected to have a system capable of running Minecraft with the Caves and Cliffs update and all its expected/upcoming features with some stability, if they don't, then they can either play the older versions of the game and leave the rest for the people who do want these features to be in the official game and have better computers that can handle it.
