On the one hand, they are meant to be specifically raider enemies and not be tamable. Adding a way to pacify them easily would greatly weaken raids. Also, they are attackers on their own, and as such they might be overpowered as mounts.

Ravager IS useful.
It forces you to cease brute melee slashing and turn to more deceptive ranged combat or dynamic shield use.
It's also a good source of saddles, of great value when applied on striders or horses.
Farming pigs and hoglins is not useful. They should get something extra beyond being very subpar mount or hazardous/leatherless version of cow. Such as crossbreeding to get a tanky mount.

Maybe there could be wild variants although they don't look like they'd belong in the overworld. Maybe in a new dimension, or a rare biome of the overworld.
I don't think Ravagers would be found in the wild- they're sort of like a mutant abomination created by the Illagers. Which isn't to say that they couldn't be found elsewhere- I've always wanted to see more variety with Illager themed structures- such as some sort of factory or fortress building in which you could find Ravagers in cages. I think taming them in general is a good idea- but if they're to be about as fast as horses, and in posession of a powerful knockback attack, they should be somewhat difficult to find. You wouldn't, for example, be able to tame the Ravagers from raids- you would have to find them somewhere, and perhaps use some sort of potion system like how zombie villagers are cured.
Also, maybe instead of or in addition to a knockback attack, Ravagers have other benefits- such as being able to carry chests in addition to a player.
How exactly could we tame the ravagers, would you suggest? I'm not saying there isn't a possible solution but in your original post there wasn't any suggested method of doing so.
That said, I could see this being interesting. Especially for PVP grief enabled maps or people who are into cooperative raiding on PVE servers.
And this is where I would say the Ravagers being able to tear down enemy stone walls and stuff would make sense.
it would be something you'd have control over and on anarchy servers it really wouldn't matter, because the other players there are likely going to break or steal your stuff anyway.
Now that I think about it this is where I could tolerate Pillager Ravagers being able to demolish walls and fences, if the players were also using and riding ravagers. This would invoke a "fair game" mechanic and force players to think carefully whether or not the benefits are worth the risk. So they could ride their tamed Ravager, but with a caveat, the enemy Ravagers get a buff to balance out the amount of destruction. You can destroy the Pillager outpost with the Ravager, but in so doing, any neighboring builds of yours are likely to be destroyed if your Ravagers don't finish off the Raid/Pillagers quickly enough.
