The giant could be a mini boss that summons in the large generated caves and would be slower than a zombie but still be as strong as it is already. The encounter could work like a raid where you encounter a pack of zombies with the giant and the more damage you do the more zombies spawn in around you and maybe zombie horse's could be implemented as well and are faster than the zombies attacking the player and once you defeat the giant you could get a treasure map that leads to a chest that could have loot such as the end city loot you can find.
Second note the giant could also be spawned with armor and weapons. And maybe the zombie horse's could have armor, and rarely like the spider jockey have a zombie on a zombie horse that can spawn during the encounter.
I recommend you look up the Warden. It's a mini-boss style creature being added in 1.17 to the Deep Dark, and while we don't have a full register of details on it, it seems quite strong.
Zombies are cannon fodder.
If one bunkers up, they all become future dog food or emerald source.
Too predictable, unlike raids where the enemy actually can negate block advantage with evokers, tries to target other things than you, and uses ranged weapons, Ender Dragon ignoring block existence whatsoever or Wither able to blow Obsidian up consistently.
