this idea is pretty cool, but what i think is a little unstable is the idea of an alternate way of getting to the end.
I personally would like them to be added in a dimension that expands vertically, requiring special vehicles for locomotion (dragons).
That dimension would be a way to get to The End without facing the dragon.

There's not gonna be any more dimensions, and if there was, it won't exist just for the sole purpose of helping a player slack around facing the dragon and getting to The End easier. That's just terrible terrible game design. Not how a good idea works at all. Also, you shouldn't suggest a dimensions and more dragons without explaining either. no support at all.
The devs have stated that there will be no more dimensions added, and I support that especially as long as the existing dungeons still could use a ton of work. The Nether is getting somewhere but has a long way to go, and The End is barely even started.
Dragons? I support adding Ender Dragons as a powerful and rare type of mob you can find in The End, to make it more interesting.
Here's my idea for adding more dragons to The End: You could rarely find a derelict set of obsidian pillars, other times you might rarely find an Ender Drake. Occasionally you might find an Ender Drake nesting within its pillars, and they will be active (healing it). There will be a rare End-only food item which can be presented to the Drake to halt its aggression with you, and also lead it. If you lead two Ender Drakes together, you can breed them and get an Ender Drake Egg -- looks like the Dragon Egg but it will eventually hatch as long as it's placed on a warm block (like magma). If you lead an Ender Drake to a derelict set of obsidian pillars, it will activate them and make that spot its permanent nest.
I'd like them just as another thing to hack to pieces with an axe/sword, turn into roasted arrow hedgehog with a bow, blow into gibs with grenade launcher firework crossbow or impale on a trident in some big Overworld nest / cave / bioweapon testing bunker hall, or in distant biome if at all.
Alternatively in different dimension, such as Aether with floating islands and some thin surface to cover bedrock slab below.
All depends on setting elsewhere and other additions, dragons for sake of dragons is not for me. But hunting them from a redstonepunk gyrocopter that works in Aether only or with elytra sounds like an idea... *omnious grin*

There's confirmed to be no more dimensions. And the Aether is a mod. Mojang has also stated that they won't take any more content from mods. I'm also not sure I like the sound of a redstone helicopter/gyrocopter. It sounds far too technologically advanced to fit into a fantasy-esque game.
We already got without mods, command blocks or data packs: slimeblock humongous mecha, tanks with working tracks, strategic carpet bombers, assault multiple-launch hand-held semi-automatic rocket-propelled-grenade launchers (AMLHHSARPGL, A.K.A. enchanted crossbow with fireworks), powered railways, anti-personel landmines, cluster-warhead fully-automatic heavy artillery (A.K.A. TNT cannons with appropriate circuitry), computers, automatic brewing, smelting, farming, and grinding machines... problem?
As of "no new dimensions" - good to know.
