Cobblestone is renewable in the overworld. You build a 1-block-wide fountain 10-12 blocks long and put a water source block and lava source block at each end. Neither is consumed so as long as the lava is preserved you can get infinite cobblestone by mining the cobblestone block formed where the two mix.
Also, mining stone is faster and stone has its own uses if mined with silk touch. So you can pour lava over a pond of water and mine the stone through the lava, then have hoppers under the pond to collect it.
Cobblestone in the Nether is useful as an early defensive structure but is an eyesore and there are better native and non-native blocks for repelling Ghast and Blaze attacks such as granite and diorite, nether bricks, quartz pillar, etc.. I only use cobblestone for furnaces and pickaxes. That's low consumption levels. Just port a chest of cobble from your mining/quarrying exploits with an Ender Chest and you'll have enough for a month in-game.
In any case, I don't see how or why this particular block - this block in particular, rather, helps you with automation in the Nether.
I still support your idea despite all this, because netherrack is really just hot and spicy cobbles anyway so it should be possible to craft or cook it into cobbles again. Plus, that would be convenient for using up large amounts of cobble faster than cooking nether brick. 4 netherrack in gives you 1 cobble out? I would empty my netherrack chest real fast.
In any case, I don't see how or why this particular block - this block in particular, rather, helps you with automation in the Nether.
The whole purpose of the Nether Update was to make survival purely in the Nether possible. As in never going to the Overworld once. The Nether has greatly improved, but without something as simple as a furnace to smelt porkchops and nether bricks, only so much can be done.

Adding cobblestone to the nether would not give it that hellish feeling. It is supposed to be hard to survive in the nether. Adding cobblestone would be horrible. Plus you can easily get cobblestone in the overworld. You can literally mine cobblestone with your hand in the overworld.

Apparently the goal is to allow you to survive indefinitely in the Nether. However, you can just rely on Nether Fortresses and Piglins for most armour/weapon/tool needs and then just bring along a finite amount of cobbles for furnaces and other appliances.
People who justify bringing items over into other dimensions or making them easily renewable don't understand that the game gives you alts for a reason, and that things like furnaces, lava-water cobble generators, and enchantment tables are one-time builds and their products are renewable even if the vector to make them isn't simply because you don't consume the vector and you're supposed to protect it from damage and preserve it.

Personally, I'm not fond of the idea of the Nether being its own thing separate from the Overworld to that extent, but hey, it's not like you're forced to stay there. I'll change my mind to full support for cobbles in the Nether because I think it's fair that people who want to live in the Nether only should be able to do so.
Well, this thread is technically pointless now. The newest snapshot added Blackstone, which can be used to craft stone tools and furnaces. Although I'm still not opposed to adding some recipe possibly involving bonemeal to "bleach" Blackstone into cobblestone.
