There should be a night where there are no mobs spawning, perhaps during certain lunar eclipse, or fullmoon. This shall be a calm night. My plan is that there should be nice and calm music playing on these rare nights, perhaps even a new mobs like fairy. If you approach the fairy she will heal you up full health..............

If you fish during any one these nights you get unique fishes or items.
To me it reminds me of the Blood Moon mod or I guess Phantoms spawning but with a bit more to it that makes it feel like a good experience over an annoying one. Interesting differences/ideas for situational events. Not sure if I'd put support for it but it is a good idea and has enough depth to it.

Isn't this directly from Terraria? That isn't a bad thing, but just an observation. We do already have a few things like this, such as the moon cycles affecting mob spawning, cats spawning during fullmoon have 50/50 chance of being black, and zombie raids that can occur on a village at midnight. I suppose it wouldn't be a stretch to add more such things, although not sure about a fairy mob.

Some random events would be cool but not have them be too random to where it a world can go without ever experiencing the event. Like it should be random up to about 50 minecraft days or something.

Stuff that happens during the day could also be interesting, pillagers kind of go in that direction. Although they made them super common. IT'd be nice to see more random events, just not exact copies of terraria ones.
Fun fact, in hardmode pillagers are force spawned every 5 days. Other events could easily work like that, i imagine. Something that could be interesting would be a night where phantoms spawn regardless of if you slept, although maybe that'd be silly. They just seem so easy to avoid currently.

What does the Fairy look like? Any specific biomes? Is it neutral in any way? Drops? Is the "healing" a potion effect?

That might be too crisp a change all at once, but tinkering with the day/night events bit by bit could be interesting!
