Trees will have different stages of growth like wheat or carrots. They will start as saplings then will grow into a small tree then will get bigger and will finally grow into a full tree.
would it grow the top of the tree over time or would it just be a wood block to begin? how would the game handle a block over where the tree is supposed to grow?
support for this suggestion if you can answer those questions.

Infact, minecraft is actually better with things instantly growing (rather than go through stages) when it comes to making redstone contraptions to detect growth for automatic farms
Even if automatic farms werent an issue, theres way too many other small things, that id rather see in the game. Far too many
There's a mod called Dynamic Trees which does the same thing. It works great and really adds immersion and variety to forests, so I'd definitely support that becoming a vanilla feature.
That said, the only problem is that it would require rewriting how trees are handled, and thus current trees wouldn't be compatible.
I've always felt like trees (and forests) could use a huge rework. The number of trees that have their canopy one or two (or even three) blocks is far too frequent, and these don't qualify as trees in my mind (at least grown ones). It makes forests poor and boring to navigate and play among since you're just trying to find a path through a maze of ground level tree canopies.
Taiga, Mega Taiga, and jungle biomes (the latter two especially) are nice at not doing this, but that is only a few of the many forest types, and not all trees should be as tall as the ones in Mega taiga and Jungle biomes.
That being said, the iconic little Minecraft tree is not something I'd expect to win over popular opinion to be changed, but I think if they handled it well, they could pull it off without really upsetting much of anyone. I'd at least like to see the variants with their canopy starting less than three blocks from the ground removed. Raise the maximum height they could be and/or introduce a middle tier of tree (between normal and the Great Oak). I think trees/forests would be vastly improved with those changes. For those who still want foliage larger than a single block bush, but smaller than the now-minimum tree of three trunk blocks tall, introduce a new sapling that essentially grows "large bushes". There's already a tree type somewhat like this, where it's "canopy" is more of a circular sphere that starts one trunk block off the ground. So the smallest possible tree wouldn't really be gone entirely, but it wouldn't be like 80% of normal forests.
There is the other big issue of causing biomes to be more lag inducing upon world generation (think jungles with the vines) until all trees are fully grown, unless generation only puts in fully grown trees, but then you're adding all of this work for variety that... will not be seen so much less unless you manually grow trees, and I can't see them doing all that work only to keep it out of world generation either. Perhaps it wouldn't be as lag inducing as I'm thinking, and surely it COULD be done if game performance as a whole were better... but I don't have that much faith in Mojang regarding performance, sadly.

I don't think it's really fair to dismiss an idea because it might effect those who let the game play itself.. Minecraft is a survival sandbox game, not an idle game. It can be the latter but it shouldn't be prioritized over the intended ways of playing. Worst case it makes auto farms maybe a little less efficient, but who needs thousands of logs anyway?

Well id have to ask, what is your definition of fair? Because i would argue that "fair" is being thoughtful of minecraft's current community, and doing your best to help it rather than carelessly ruin some of the gamers favorite parts of minecraft.
I dont think its fair to sacrifice something that a decent portion of the minecraft community uses, just for "immersion" when there are "other" ways to make minecraft more immersive.

It might effect current farms but because some people have auto farms doesn't mean the game can't be allowed to evolve. Right now this change could be seen as a benefit to most MC players, and becoming only a slight inconvenience to auto farmers.
It would really be cool to have this since trees can prevent the growth of other nearby trees (sorta like IRL) so you can have a forest filled with tall and small trees. It would add more variety to the world.
As for new tree types. Why not both? Growing trees and new trees sound awesome to me.

I really agree with Princess Garnet on this situation. I plant quite a few oak trees in order to always have wood near my base, and they become a thicket at ground level so dense I have to flounder around smacking the foliage away in order to even find the trunks and there are the occasional supertrees requiring pillaring up to harvest lest they never decay. and form a solid overcanopy.

Actually now that you mention it, I'm gonna try to make a deliberate hangar-like canopy over my cabin by mining the trunks and leaving the canopy above, and leave the trees on the sides to "support" it... thanks for the idea!
if you put solid blocks a certain height above the ground over a sapling itll change the sapling from some chance of supertree to no chance. maybe use half of OPs idea, like dont have height limited trees naturally but have the ability to manually stunt them into 3 or 4 block trees with solid blocks above them? maybe each manually shortened tree up to the normal height can have several possible leaf variations?
I like the idea in general but the implementation is up for suggestions
In my opinion, we're way better off having trees growing at the pace they do now. It may look nice, but if you think about it; would you really enjoy the trees growing at a slower pace? Would it be that convenient? There's plenty of mods that make this a reality. Try them out, see if you like them.
Unless these stages took the same amount of time it takes for a tree to grow now in Minecraft (an ingame day or two, sometimes 3) I'd be fine with it. This idea, overall though, sounds quite inconvenient. It would look sweet, but wouldn't be fun to live with. This is just my opinion. Also, please consider adding more detail to the post so we can discuss this idea further.
