I am sure this has been mentioned multiple times but I want to reiterate it. I notice very few difficulties between normal and easy, so little that I don't think I would ever notice a difference between the two unless I was told what difficulty I was on.
I love playing Minecraft on the computer with my kids, and they love the scare of monsters but on easy they are far too hard. The main things I notice on easy difficulty that should be changed is:
-ALL Mobs should have less health on easy difficulty
-ALL Mobs attack speed should be lower on easy difficulty
-Skeletons should fire bows WAY SLOWER on easy difficulty
-The drowned should spawn a lot less on easy difficulty
-The drowned guys that throw the harpoon should fire WAY SLOWER on easy difficulty. They practically have a machine gun with auto aim.
-Food depletion is ridiculous on easy difficulty. Each single time we fight a monster, we have to immediately eat right after it or we will die when the second monster comes to fight because our hunger is now so low from replenishing our health.
I understand many people think easy is "too easy" but it isn't. If you are a hardcore gamer I guess I can understand how you think this is too easy, but when playing with kids, or someone that rarely plays video games, easy is definitely NOT "easy." My kids and I have enchanted iron swords and all iron armor (Some enchanted) and we have a low chance of winning a battle if there is more than one monster coming at us at one time. Even with a good sword and strong armor we die so fast it is ridiculous.
Anyone remember playing the original halo on Xbox? On easy you could basically run threw the entire map just melee every enemy because it was in fact EASY. If you just wanted to have fun and goof off and have fun playing with your kids that barely know how to play, this was perfect. This is the same experience I wish Minecraft had.
This is Minecraft. Your greatest strength lies in your ability to manipulate the world. It takes only a few seconds to create a shelter that makes it impossible for mobs to come at you more than one at a time. Or one from which you can hit mobs but they can't hit you.
I can kinda relate to this since I'm a bit of a n00b even after four-ish years of playing the game, mostly because I do a lot of stupid stuff like jumping into a group of monsters thinking I can kill them all.
That being said, I think I'm the exception to the rule. I also find that people who think the game should be easier tend to say it's too hard for their kids. That's fair since Normal and Hard exist to make the game harder, so why shouldn't Easy be easy enough for the lowest age demographic the game appeals to, namely 10-year-olds?
Alright so what about these changes?
-ALL Mobs should have less health on easy difficulty
Eh... Maybe on its own, but I wouldn't do that in addition to all the other additions.
-ALL Mobs attack speed should be lower on easy difficulty
Seems reasonable.
-Skeletons should fire bows WAY SLOWER on easy difficulty
Agreed.
-The drowned should spawn a lot less on easy difficulty
Hmmm maybe? I haven't had a lot of experience with drowned yet, but I do think the fact they spawn in any water with a light level of 7 sounds annoying.
-The drowned guys that throw the harpoon should fire WAY SLOWER on easy difficulty. They practically have a machine gun with auto aim.
Again, haven't had a lot of experience with these guys yet so I'll have to take your word for it.
-Food depletion is ridiculous on easy difficulty. Each single time we fight a monster, we have to immediately eat right after it or we will die when the second monster comes to fight because our hunger is now so low from replenishing our health.
Food depletion in general is kinda ridiculous, so you're not alone on this one.
Now, in defense of Minecraft as it currently stands, I don't think even in Easy mode monsters should be incompetent. But I do think they do deserve a little bit of a nerf.
Mostly Support.

My avatar is a texture from a small block game I made in Python. It's not very good and it probably won't work if you install it.
I'm very alone in my Minecraft worlds as I don't have a very good internet connection to run a server. If you're like me, you might be interested in my Posse mod suggestion.
Use your bow and arrows. I use that way more than my axe and sword, one of my favorite things to do is nail mobs from long distances its especially fun drilling moving targets from far away. Also i noticed the axe and trident are stronger weapons than the sword. You can also turn off losing all of your items when you die in the cheats menu, that should make things much easier for young kids. Another thing you could do is use USB controllers, this makes things so much easier than mouse and keyboard. I grew up with controllers and i can not get the hang of playing with a mouse and keyboard no matter how hard i try. (i play on my phone, the touchscreen is GREAT!)1 thing thats great about this game is its customizable so just do whats best for yall to have fun.
You get your 10-year old a wooden birdhouse kit. He complains it is way too hard. You find out he is trying to push nails into wood with his fingers.
Do you call the manufacturer and suggest they make their birdhouse kits out of foam?
Or do you teach the kid how to use a hammer?
The game is called Minecraft. Aside from the main bosses, every mob can be rendered incapable of reaching you by either mining(digging out blocks) or crafting (placing blocks).

I agree 95% with this response. The only reason I do not 100%, is I have dealt with the drowned a lot, and I can see the viewpoint you may have with this. I have witnessed my daughter get slaughtered over and over with these things.
As said, nerf, not incompetent. I personally cannot test to the difficulty of easy because I started out on normal, and have played hard for years. I do see a lot of what you said though through my kids.
I mean, I don't play on easy difficulty and if you do play on easy difficulty then I suppose you know what you're in for, but I don't see how you can be this bad at the game to the point where you can't win against a skeleton on easy difficulty...
Personally, I find normal mode to be too easy, and I think hard mode could be harder. I think what they need are five levels of difficulty, adding one additional level below easy, and another above hard. I don't think hard core mode really factors into this, because the only difference between it and hard mode is that it's a one and done deal. The stakes are higher, but the difficulty is the same.
My thoughts on the easy mode as it stands right now; If easy mode is too difficult, you need to play smarter. Be aware of your surroundings, avoid going outside at night until you have decent armor (a dirt shelter can be built within minutes of first entering a new world, or just dig into a hill side, use blocks to cover the door way when needed), use torches liberally, build traps, use the bow and arrow when you can... my youngest was playing normal mode just fine when he was nine years old.

And when you upgrade to enchanted diamond gear you become very tough.
If you're playing with kids who are struggling you could use creative mode to cheat in better armor and weapons.
(Can be turned on temporarily by opening the game to LAN on the menu screen.)
Just testing.
