Here is a set of ideas for more animal life in Minecraft.
Sponges
There should be small stacks of wet sponge in warm oceans. Not much to this bit.
Crabs
Crabs would effectively be spiders, except that they would spawn on ocean floors, and beaches, and would also move sideways. They would have a chance to drop the crab shell, which works like the turtle shell, except that it gives night vision instead of resistance.
Ants
Ants would have a nest, like bees. They would collect leaf blocks from the environment, and bring them to the nest. They will shoot projectiles like llama spit, which cause poison.
Crocodiles
First, there would be floating wood in all water, which would be an entity which floats in water, and drops a log when broken. Crocodiles look like floating wood. They would attack when the player got close.
All though it’s a quality idea and I personally love it, would it fit in with the current idea of minecraft, like right now Minecraft is filled with not real animals and mobs, adding a couple of real life ones would be a good idea, but if they add a couple they might add more this turning the game basically to a “survive the island” game

I have to disagree. Why do ants spit? Why is sponge randomly spawning? The sponge in minecraft is not alive, nor a sea sponge. If the crabs are basically spiders, what's unique? Even though they drop the shells, I wouldnt even use it. And logs floating in rivers? In my opinion it will look weird.

Some real ants can spray poison.
Sponges are already only obtainable from water.
Crabs are unique because they are found underwater.
The floating logs are to improve the crocodiles' disguise.
