In my opinion the current boat system is a bit too easy. You can craft a boat, and that's pretty much it. After that, there's really no challenge. I propose adding a feature that allows boats to sink if they have too much weight on them. Since boats can carry an extra entity in the back, perhaps it could be in a system where some entities are heavier than others. For example, a villager would likely be heavier than a pig.
Right now extra entities can only be in the back of a boat. However, with this system, an option could be added to put the entity in the front or back of the boat. If there is too much weight on a specific side, the boat will sink, and any entity in it will drown. However, the weight can be balanced by having a player or another entity sit on the opposite side of the boat, which would balance it. However, this weight can also be balanced in other ways.
Side note: I've been mentioning this weight issue as affecting extra entities in a boat, but it would also affect the player(s)
This new system could finally bring a proper use to gold. If you can't be bothered to always have multiple entities in a boat to balance the weight, you can use gold ingots, which have some weight to them. Gold isn't too difficult to find and it's not too easy either, making it the perfect choice. The amount of ingots necessary would depend on the weight on the other side of the boat.
Lastly, this feature would have the ability to be disabled via gamerule.

If they added this, this sounds more like an opt-in feature than an opt-out one, since I feel most wouldn't like playing with this one..
It just makes things more complicated than they should be. One amazing thing about boating is it allows new players to get far from spawn on public servers to find a good place to build far away, and with transporting entities already quite the hassle, I don't think it should be made into a bigger one.
