Why do we need polar bears, parrots, fish as mobs, silverfish, endermites, and bats?
Polar bears were added as a promise to Jeb's wife after they had a son and because polar bears fit the ice part of the 1.10 update. Parrots were added to fit the colorful theme of 1.12, and they have a use through imitating nearby mobs as a kind of warning device. (Bad wording.) Notch wanted to add fish mobs as far back as June of 2010, but the team wasn't skilled enough to add them until recently. Silverfish were added to make strongholds more difficult, as evidenced by their ability to burrow into stone bricks and break out in swarms when their brethren are attacked. Endermites were most likely added for mapmaking purposes. I say this based on their small size, their non-conventional spawning method, their ability to control endermen with their mere existence, and 1.8's theme of adding more features for players (making the game more "bountiful", hence "the Bountiful Update".) Bats were added to make caves scarier (1.4 was the Pretty Scary Update, after all) and to make underground feel more alive. They're ambient mobs.
I agree that jellyfish would be a cool mob to add, but I feel like oceans have had enough love for now. Oceans received a full overhaul just over a year ago, and now they're filled with much more than just squids, gravel and ocean monuments. Give the players a break from tons of new mobs being added, and then I'll be able to support a small addition at a later time.

Come to think of it, I mainly play fighting-based games.
But they are a pretty cool addition so why not? minecraft feels more alive with them hence we need them. Minecraft isn't just building, its also mainly focused around adventuring.
If games only contained the absolute bare minimum needed to function and allow the player to complete whatever tasks are needed to beat the game they would be way less fun. Especially a game like Minecraft where "create your own fun" is a big portion of gameplay and appeal.
That said, it would be cool if these had some additional functionality. Maybe they could repel Drowned or something like that.

Jellyfish spawns in warm ocean biome.
They spawn in groups in different sizes.
They drop slime ball (small chance).
They are passive, but if you touch them you get damage as from sweet berry bush.
