Whale is a large (2x3 blocks) neutral mob spawning in a deep cold ocean.
It is VERY hard to kill whale because: 1) it has a lot of health points; 2) it can crush your boat; 3) killing whales is bad, don`t kill them.
But if you manage to do that: it will provide you with "whale fat" item. You can use it to craft "whale lantern" by combining "lantern" and whale "fat". It will extend luminance by 1 (to 16)
Well besides the lantern's ability being impossible without a large overhaul to the way the lighting system works (the system is limited to having 16 light values, from 0 to 15 because light data is stored in 4 bits), this just doesn't seem like a good idea because the benefits do not match with the challenge of killing the whale. Even assuming this lantern did work somehow, you basically have to kill a challenging mob to get a light that is barelybetter than just using a torch.
Besides that, if Mojang won't add sharks because they take a moral stance against people killing those, there is no way they will add whales, for the exact same reason.

If so, they must cut from the game white bears, lamas, foxes and other animals.
Polar bears, llamas and foxes aren't commonly hunted. Sharks are hunted for their fins (for soup, nonetheless), and whales are hunted specifically for their blubber.

Come to think of it, I mainly play fighting-based games.
Regardless of whether they have another use, I think whales should serve as an ambient mob to add more interesting sights while exploring the ocean.
As for more practical uses, whales are very intelligent animals, so that aspect of them could be made into something interesting. Perhaps they could lead you to the shipwreck of a very large ship that's very deep underwater. They could also make certain sounds when they see players, giving players that keep whales nearby an advantage in surprise attacks in multiplayer.
Whales sound awesome. I honestly don't think you need an item, whale fat's use is already taken up by lanterns. Maybe change the crafting recipe to include whale oil.
Wolftopia, your idea for deeper shipwrecks sounds too much like dolphins, imo. I think whales should be friendly mobs.

It'd make sense since whales and dolphins are both cetaceans and intelligent. Whales would just go deeper underwater to lead you to deeper shipwrecks. I don't think it would be "too much like dolphins" considering whales and dolphins are somewhat closely related.
While 3 blocks long would be about right for the dwarf sperm whale I think 10 blocks would be the minimum for what most people would think of when they think of a whale, and if we're talking blue whales they should be at least 20 blocks long (preferably up to 30).

Larger mobs don't really work with Minecraft's grid. They'd get stuck in a lot of spaces and create some derpy situations.
IF whales would lead you to ocean monument i think quardians should be afraid of Whales and flight from them cuz they wouldnt stand a chance against a whale
