I was inspired to post this as I had found a black, textureless pig (His name's Hubert. He's still textureless, and it's been a couple of weeks. He's my base's 'mascot' if you will). Though I admit the pig doesn't look very aesthetic, it did spark my imagination. I'm almost positive others have had this same idea, and have posted it to the forum, but since I'm not seeing any recent posts about it, consider this a repost.
The only animals in the game that have different varieties of textures are: horses, cats, tropical fish, llamas, and mules I believe, and that's great! However, there could be plenty more. Here's some examples:
Pigs: Could be black, brown, light brown, or pink. They could also have spot(s) using the aforementioned colors. Even better, pigs could rarely spawn with mud on their feet! I was contemplating whether or not pigs should be able have a chance of spawning tusks or not, and I have decided against it. It would be better to just add a new boar mob.
Cows: Could be black, brown, light brown, or white. They likely would also have also have spot(s) using the aforementioned colors. They would also have different varieties of patterns.
Chickens: Could be black, brown, light brown, gold, or white. They could also have smaller speckles of color. Side note: They should definitley add ducks to the game.
Squiads: Could be red, pink, blue, black, all sorts of colors. They also have specific dot patterns of yellow and pink.
Tell me what you guys think and come up with your own ideas for animals.

I forgot to elaborate on the size idea. Basically, it wouldn't be a huge difference in size. It would apply to all animals, and would only be a few pixels smaller or larger.

Yes i would love this all the way, it's so boring when everything looks exactly the same lol. Like players not being able to pick skins, or all the fish in the water being salmon (the salmon in the game already)
But instead we have guardians, squid, cod, puffer fish, dolphins, sea turtles etc.. it makes going underwater feel AMAZING! Not knowing what to expect!

I agree with you but after a while of playing you do get to expect what is underwater. Perhaps they could add rare versions of animals, so one day you could find a pink dolphin?

Though that may be true, the animals sizes would be rather insignificant. The size difference would only be noticable if two of the same species were put side by side, which you would only notice a small half pixel height difference.

MC animals are not sexed. Adding cosmetic tusks to a percentage of pigs would not in itself be likey to be a major point of contention, but explicitly male pigs (boars) would be.
Ducks have already been discussed elsewhere both as cosmetically reskinned chickens and as distinct mobs: depending on what is meant, various of those discussions would apply.
While changing the heights of the actual hitboxes would be problematic (in terms of breaking longstanding mechanics), changing the visual height would not (ie witches and villagers have the same hitbox but different visual heights).
Unclear what is meant by "a small half pixel height difference" (the nearest thing I can think of would be lowered opacity which does not seem like it would give the desired effect).

While I like the idea of having more than one dog type, this proposal is a fine example of the slippery slope… [although offering different colored and patterned eggs seems to have been missed].
Any multiple skins and or spinner produced variety is going to add some increment of lag, how many types (and of what mobs) can clearly become an issue if the idea is extended to all possible base models.
There is also a question of ease of identification if several mobs can have both the same color and similar models; I would doubt many players would find excursions into taxonomy a fun addition to MC.
Limiting the effect to mobs that can be tamed as pets/mounts seems a good place to draw the line (tropical fish being the only current exception).

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
A few points on non-'skin' changes:

I mention boars and ducks just as small notes. They're ideas I could do or do without.
I am aware that mobs in Minecraft have no gender. However, I was not aware boars were only male, so with that bit of knowledge I agree boars should not be added to the game.
By sizes, I simply mean they would not be a major change. Hitboxes would remain the same. The sizes would be barely noticable. Tha main topic really was the animal textures, I added the size idea a little after, so I apologize for not explaining myself thouroughly.
Since Minecraft already has variant forms of cats, horses, and the other critters I mentioned in the original post, I doubt it would cause much lag. Perhaps my idea would have to be tested to truly form a conclusion.
I don't quite understand the issue of ease of identification. Many animals in Minecraft are the same color already. Wouldn't it be easier to identify certain mobs? Perhaps I don't understand exactly what you mean.
Personally, I've always been a collector. Whether it be rocks, plants, minerals, coins, and, you guessed it, animals. I would have much fun with collecting animals, especially if there were certain desirable traits to those animals. Let's say for example that a brown pink spotted pig was especially rare. If I were to find it, I'd collect it. In my world where I play with my buddies, we have our own economy with emeralds. I could make a pretty penny off some of the animals if they were considered rare. It would also be neat to be able to say you have an incredibly rare animal that no one else has.
In simpler terms, my idea is to apply what Mojang did to horses and cats to the other Minecraft animals, like the pig, cow, chicken, et cetera.

I'd have to disagree about the size changes on the basis that it would break a lot of current farms. Otherwise I'd support this idea.
