One iron golem is not enough to defend a whole village against so much pillagers. There should be at least some villager combat to spice up the battle. I would like to see some brave villagers wearing some head band and running like crazy towards the pillagers and fighting them. It's fun, but do you agree with me that there should be any villager combat?
Strictly involving villagers? Not a chance. I can see villagers taking on various support roles related to combat-oriented mechanics, but actual fighting would never happen.
Villagers (things I could see them doing):
-building walls and other fortifications
-repairing damage to structures
-material support (free combat-oriented trades during raids, stocking defensive inventories, tossing arrows/weapons/armor at defenders, etc)
-healing the injured
--locking gates
--summoning defenders by ringing bell
Golems (things I could see them doing--with or without further updates):
--personal guard (staying close to a villager)
--stationed guard (staying close to a particular building)
--focused patrols (ie, wandering around the entrances or smaller divisions among the village)
Rovers (potential new golem-group "villager" not associated codewise to villagers)
--summoned during raids by ringing bell
--shoots arrows at pillagers and zombies
--charges into battle to intercept raiders inside village
--patrols beyond the village to intercept pillager patrols (could potentially enact raids)
--follows player around to deal with imminent threats outside of village (taking the fight to the raiders)
Not sure how it would work, but perhaps we could even have an army vs army mechanic where the player doesn't really engage in battle directly but manages forces to prevent, contain, and deal with threats (RTS in Minecraft?).

Ok, so just saying: It has already been confirmed that villagers won't protect themselves in ways other than Iron Golems. Just a heads up.
Huhu why am I here? No reason.
