This is a new type of boss mob. Sorry if bad format and typos because I wrote this on a phone.
How to get to the Overlord
SUMMONING CHAMBER
The summoning chamber is made out of quartz and pillars. There are quartz stairs as the roof of the chamber. The inside iit with sea lanterns and glowstone.
There are 7 outer pillars arranged in a circle surrounding 4 inner pillars surrounding one pillar.
In the 7 outer pillars, you place iron block in a pillsr, and then a gold block on another and a diamond block in another and a redstone block and a lapis lazuli and a coal block and a emerald block. In the inner pillars, you put a prismarine block in a pillar and a grass block in another and a netherrack block and an end stone block.
Finally in the innerMOST pillar, place any mob head inside.
Rule: Dont destroy anything and place the mob head LAST.
The pillars and objects will shine and disappear and a huge golem with a crown and carrying a huge white sword appears. After a few seconds, he will laugh and send a shockwave that will knock away mobs and players. The shockwave doesnt deal much damage but the knockback is great. The battle has begun.
Overlord attacks:
Attack 1: He will walk towards you and swing his sword at you. The sword’s damage is that of 2 and a half diamond swords.
Attack 2: He will charge his sword for 2 seconds and swing his sword. A ghast fireball will fly from the sword and towards you.
Attack 3: He will roar and shoot many blaze fireballs in all directions.
Attack 4: He will jump and crash on the ground, sending a shockwave that deals lots of damage. It always breaks the following blocks: Flowers and Grass, glass panes and grass blocks, stone and cobblestone, wood and terracotta.
Attack 5: He will raise his hand and lightning will strike you or a mob.
Ability: The Overlord will suddenly turn gray and will be immune to all damage except for potion damage. ArrowsThe boss won’t attack but he will heal slowly, so attack him with harming potions.
The Overlord has the health of an Enderdragon. Arrows are the least effective weapons to the Overlord, but if they have potion effects, then they will be a killer.
The Overlord is fairly slow, but very dangerous and powerful.
When the overlord dies, there will be a death effect that lasts for 4 seconds and a shout that sounds like NOOOOOO and you have to run away before he explodes. There will be tons of exp on the ground, and iron and gold. Also there will be a new sword.
The sword will be called The Sword of the Overlord. It deals the same damage as 1 and a half diamond swords. If you hold right click, you will charge up a ghast fireball. The charging takes 1.5 seconds and it takes up 2 fire charges or some of your exp.
Also, you get an achievement and an effect that lasts for five in game days. Aspect of the Overlord. It basically gives you strength 1 and regeneration and cancels raids and removes and prevents Bad Omen.
1) Build a complex summoning gizmo (this is described, but not in sufficient detail to be able to reproduce what the OP envisions)
2) Summon beastie
3) Spam beatsie with Potions of harming (and possibly tipped arrows, the description is unclear)
4) collect Der Super Sword (& a short term buff roughly equal to a beacon and an endless bucket of milk)
The combat (as envisioned) could be dramatically animated as a console game hoop-jumping reward, but in MC this would likely become just a farm for a new tier of super-diamond sword. [Spider eyes, brown mushrooms, sugar, glass (or bottles), gunpowder and blaze rods are all farmable. The brewing of potions can be automated. Setting-up might take a bit, but gangs of clocked dispensers firing splash potions would make a kill fairly trivial.
(Note that this would avoid any need for Dragon's Breath.)]

Update: There is only one summoning chambr in your world and it is only one time use! In order to find it, use some kind of device that you could craft. It could be made out of a compass surrounded by 2 ender eyes and 6 blaze powders

Okay, but every other boss in the game can be fought multiple times. Why would this one specifically be only able to be fought once? Plus that means if you lose the weapon drop somehow, you can never get it again, which is also weird because once again, if you lose an item in minecraft, chances are you can get another.
There is precedent for this sort of thing (the egg dropped after the initial dragon fight), but that item is [in theory] solely a trophy.
As the one time only drop would be the best weapon in the world (literally), this change introduces another major downside to the suggestion.
Whoever was first would receive an otherwise unattainable advantage over other players: this would be most directly felt in PvP, but would also affect the ease with which other activities could be conducted (exploration and boss-mob farming being notable examples).
While adding several such MacGuffins might be desirable for servers with a highly competitive (if not outright PvP) playstyle, introducing additional anti-cooperative elements into vanilla is somthing that ought be avoided. [IMO]

New boss? Awesome I love bosses. This boss? eeeeeh sounds fun but only ONE per world? You do know how big a Minecraft world is right? It might be impossible to find and make it pointless. Not only that but the sword you get for doing it would brake pvp so hard.
