Not thousands simultaneously, but over time, as players rotate, they will run out of combinations. And some people might troll and create multiple accounts to make that happen faster. I play on a server with an online of ~30 people on the Survival part of the server at any given moment. The pool of people who have ever played and used the ender chest might be easily in the thousands (the total userbase is about 12-15k of active players across all minigames). Plus, I think, your system is too complex for an average player.
Support I don't like the idea of the enderchests thing, but I do like the idea of this mail man. Perhaps we could even set up a buisness feature that allows you to give the mailman a large amount of the same item, give them a price and other players could buy it from their mailmen for the price, which would then procede to the player. Although the buisness part wouldn't benifit singleplayer. I like the idea, but adding the buisness part I said might make it too complicated.
Just thought about this, why not have ender chests be linked to the player unless that ender chest is named. If ender chest is named it's linked to other ender chests with the same name. This will allow 100s of trillions of different ender chest links.

I've been thinking more about your idea and now I love it even more.
It's:
1. Simple (crafting a chest is easier than breeding villagers or finding a village with a mailman).
2. Future-proof and troll-proof. Like you said, the number of combos is in the trillions (even more than that, actually).
3. Easy to use. What's easier than naming a chest on an anvil?
4. Already has a payment associated with it (XP points and iron (for replace broken anvils) to rename chests).
5. Super easy for Mojang to implement. Literally few lines of code.
I see no good reason not to add this! Would definitely spice up game play with friends, May I suggest there also be mailboxes? That way if someone wants items delivered straight into a storage system or has a full inventory they can still receive their goods?
