Why should Endermen change their texture just because they're in a different dimension? They're still Endermen, not Nethermen. Do Endermen change their texture when they appear in the Overworld?
I really don't see why this would be necessary. I actually kinda like Endermen looking a bit out of place in the Nether (which they don't really do, now that I think about it, since, they share a big part of their color scheme with Wither Skeletons), it makes me feel like I'm not the only one visiting other dimensions in my world.
That is exactly why I think they should stay the same. To me Endermen have never just been living in the Overworld and in the End. They live in the End, and pop into the Overworld to do whatever it is that they do. They are interdimensional travellers by their very existence so it makes more sense for them to not fit in with the Overworld and Nether because they don't actually belong there. They just pop in for a visit from time to time. They fit because they don't fit, juxtaposed in other dimensions because they belong in those dimensions as much as you belong in theirs.

I don't think you understand how this works. Enderman have the ability to travel through dimensions, therefore it wouldn't make sense for them to change color. Also I think they fit well in the overworld at night and in the nether.

Endermen aren't water proof, or fire proof in the overworld so why would they be here?
The regular endermen wouldn't be netherproof, but if we assume that endermen have always been travelling to the nether, perhaps some got stuck somehow for long enough or otherwise had a big enough reason to stay there--similar to how some players prefer to live in the nether or the end. They could've evolved or been transformed to become a nether native species, these netherized endermen could spawn similar to wither skeletons (most of the time you'll get an endermen, but every once in a while a netherman appears instead).

Jeb was the one who called them plane walkers making it canon and debunking this suggestion. Though if enderman had a chameleon like ability or some mob had that ability it would be really cool.

That would be very cool, but it would have to be implemented on a new mob, not retrofitted to an existing one.

Creepers can be pretty stealthy if you're paying attention to something else, but otherwise you're right. It would add interesting variety for sure.

Enderman were supposed to blend in with the sky of the end and the night of the over world so they were kind of made that way.
A chameleoon on like mob would be cool, aside from the witch no mob sneakily attacks you.
I do not think that a witch sneakily attacks you, since you normally have to be near a witch hut to see them and of course, their annoying giggle of glee that they make all the time. But on topic, I think that they are designed to blend in to the end and the overworld at night, which is why I think they should change color while in the nether, or just create a new "netherman" that fits in with the nether.

Witches use invisibility potions more commonly now. And why would that logic make sense? They're not native to the nether, they teleport there.
