I think travelling to a new world in the sky is an epic use
fair enough, but I think gold would be good for the portal, it's not to hard to come by, as zombie pigman are more common than bugs in the nether, and, apart from silk touch, gold tools are the only thing that can break aether blocks.

also gerbilcrab, I found a hiccup in your post, you stated that fire and lava can't exist in the aether, so does that mean that torches will die out?
Also I feel that the netherman and the aetherman should have there own drops, I'm thinking a netherpearl for the netherman, which will light all mobs in the area that you were and were you went on fire, including you, while an aetherpearl will have a longer range, but do more damage when you land, seems good to me.

No, torches will be fine. Not that you will be needing them. The Aether's minimum light level is 8 and the blocks are light colors so torches aren't very necessary.

Hercules sounds interesting. Is it a larger, different looking version of the beetle? The charge should not destroy blocks. Aether mobs usually don't cause terrain destruction like Nether mobs do (placing fire/ causing explosions). They prefer to directly effect the player (freezing/ knock back) as well as defending themselves from harm. I also like how the Wither focuses on ranged while Hercules focuses on melee. I would love to see the two fight each other. I would also like a different name, perhaps the Scarab.
I may come up with some concept art for The Scarab. It will be golden in color (it's made with holy logs right?), it will have multiple horns and its wings would actually be able to function. It will be flammable but can't be frozen (the Wither can be frozen). To prevent lava traps will will turn lava into obsidian with a freeze stomp attack. It won't be able to be summoned in the Nether.
All in all, thank you for the idea. I've tried to come up with something Minecrafty and you appear to have done it. Like the Wither; it is based on an already existing mob. It drops the opposite of the Nether Star which makes the opposite of the beacon. Almost everything about it screams Aether as well. It's big, defensive and bizarre.

Okay, maybe when it hits a block, it could bounce off of it and go 150% as fast as before?
Maybe Endermen who go into a nether or aether portal, they will become the enderman from that respective dimension.
And, the Nether Boomerang, Aether Boomerang, and Ender Boomerang weapons.
Each of these weapons would be crafted with a material from the respective dimension.
These weapons are thrown as a projectile. They can be charged before thrown to do more damage and go farther. After they go as far as they go, they turn around and fly back to you. These weapons can damage people before and after they turn around. If they hit something, they do damage and keep going.
The Nether Boomerang is crafted with a L shape on either side of the crafting table. The L is made of Nether Brick (item), and in the corner of the L, a gold ingot, or a magma cream, your choice. There could also be netherbrick blocks instead of nether brick, your choice too. This boomerang does the most damage, doing 4.0 hearts of damage when it hits. However, it has the lowest range, usually going like, 10 blocks before coming back. There is a 25% chance of setting the victim on fire for 1-3 seconds. This has 32 uses before breaking.
The Aether Boomerang is crafted in a similar way. Instead of the Nether Brick, you use Aether Bricks (item), and instead of the gold, you use Amethyst, or a Frost Shard, your choice. Like the netherbricks, its also your choice if you want to use aetherbrick blocks instead.
This boomerang does the least damage, but goes the farthest, going 20 blocks when thrown before coming back.. This one does 2.0 damage when it hits, doing half the damage that the nether one does. This has a 25% chance of freezing the victim for 1-3 seconds. This has 50 uses before breaking.
The Ender Boomerang is the all-around boomerang, since it kind of is neutral between them, while the nether and aether mobs go berserk on eachother, the Endermen and Shulkers really don't have any part in it, even the Nether and Aethermen. You use End Stone Bricks (the item, confirmed for 1.9.) OR, when confirmed, the new purple brick blocks in 1.9, when revealed, if they are a better choice. In the corner, there is an ender pearl, or another thing from 1.9 that we don't know about that could serve as a better choice, like the Shulker's drop. This one goes 15 blocks before coming back to you. This one does average damage, doing 3.0 damage. This boomerang has special effects on the "Ender" mobs. If shot at an Enderman, it actually hits them, unlike the other ones, where the Endermen teleport away from it. This will aggravate the mob, making it attack you. This boomerang also can deflect the Shulker's projectiles. It also has a 10% chance to teleport you to the mob you hit. This boomerang has 32 uses which is shares with the Nether Boomerang. Why have a Ender Boomerang in a suggestion called "The Aether and New Nether" because dimensional boomerangs aren't complete without the End.
My final suggestion is Soul Sandstone and Floatsand Stone. Soul Sandstone is crafted with 4 Soul Sand in a 2x2 grid, which makes the normal Soul Sandstone. Craft the Sandstone in a 2x2 grid pattern and you get Smooth Soul Sandstone. Craft any Soul Sandstone type in a row and it makes Soul Sandstone Slab. Craft 2 Soul Sandstone Slabs ontop of eachother and you get Chiseled Soul Sandstone. These are all decoration blocks. However, they all also slow you down, not as much as Soul Sand does, but it is still noticeable. Chiseled Soul Sandstone has a carving of the Nether Portal on it. These blocks have a brown texture on them, and you can see markings resembling the "souls" of the normal soulsand deep into them.
Floatsand Stone and its variants is crafted exactly the same like all other Sandstone-type blocks, with the same recipes for the Stone itself, the slabs, and all that stuff, but with the Floatsand variants. Chiseled Floatsand Stone has a carving of an Aerwhale and the Aether Spirit on it. The blocks are light blue. They act like normal blocks, and don't float. However, if you step on one, you jump higher.

I'd say use obsidian for the portal. I like the idea obsidian has properties which allow it to hold portals.

Obsidian is solid lava, it makes sense it leads to a lava realm.
Maybe packed ice and a bucket of water to open the Aether portal?

However, they all also slow you down, not as much as Soul Sand does, but it is still noticeable. Chiseled Soul Sandstone has a carving of the Nether Portal on it. These blocks have a brown texture on them, and you can see markings resembling the "souls" of the normal soulsand deep into them.
Floatsand Stone and its variants is crafted exactly the same like all other Sandstone-type blocks, with the same recipes for the Stone itself, the slabs, and all that stuff, but with the Floatsand variants. Chiseled Floatsand Stone has a carving of an Aerwhale and the Aether Spirit on it. The blocks are light blue. They act like normal blocks, and don't float. However, if you step on one, you jump higher.
