The game is built upon challenge. Having the ability to claim a dragon as a pet is rewarding; period, regardless of how long it's kept.
Having it impervious to damage spoils and cheapens the overall awe-inspiring feat to the point where instead of it being a mighty beast under your command... It becomes "It's just a dragon. That's all... Everyone has one. Who cares."
I don't enjoy the idea of it never dying. It would be epically dramatic for your mount you bonded with for so many months died while fighting a horde of skeletons.
Other than that, this idea is epic.

No, getting the egg in the first place is a huge challenge.
Having to repeat that process each time your dragon falls into lava or gets hit by a ghast? That's just a huge, annoying, chore.
A dragon flies, why would it fall in lava? And it can kill the ghasts, it's not a paper doll.
Getting a permanent monstrosity for one single challenge is not a balanced reward. It would either have to die (which would take a LONG TIME with my proposed method, so your argument about tedium is useless) or be much more limited in ability.

If you had chocolate ice cream (or replace with object of greatest affection), would you not grow tired of having it after your 3000th serving? 4000th?
Allowing the mob to die (not naturally, but by getting it killed through recklessness or just damage over the course of the battle) allows the player to reflect on how useful it was. The effect isn't spoiled.
If you have too much of a good thing, you become jaded to it. If you are in a forest, do you see the beauty of the trees? If you've lived in a forested community for most of your life; you tend to take it for granted. Same with a dragon.

Hell, even just having to toss a pig down its gullet now and then would be SOMETHING (though still pretty easy). Regenerating health is for Peaceful mode, and peaceful mode has no dragons anyway.
He can store, at a given time 5 gunpowder, 16 netherrack, 5 flint. You cannot get these back.
If you try to have him breath fire without sufficient ingredients, smoke will simply come out his nose and all ingredients will be consumed.
Why 16 netherrack instead of 15? So that it more even splits a full stack into quarters.
OK, so why not do that for gunpowder and flint? ಠ ಠ go away.
