What I want is, in theory, a relatively simple concept. I would like to, using the custom world generator options in the vanilla game (1.10.2), create a world that is mostly ocean with a few mountains sticking up out of the water here and there. I'd like the mountains to be interspersed pretty randomly, and for them to be pretty tall without being too wide. I'd also like the oceans to be really deep if possible.
I've played with the settings, and know some of what I would need to do. Namely raising the water level and playing with biome, ore, and lake distribution to bring them to levels I'd like. What I'm not sure of is the advanced options, which I know I would have to mess with to get the kind of world generation that I would want. I've tried some stuff and gotten kind of close to what I wanted, but I could never get the mountains to be high enough or the ocean to be deep enough for my liking.
TL;DR: I want a world generated with:
-Mostly ocean
-Narrow mountains that rise above the water (maybe with some wider ones thrown in there for variation)
-A much deeper ocean that just raising the water levels will give me
So, any advice on what sliders to change or numbers to input wherever would be very helpful.

Try Biome Depth Weight and depth scale.
In case you may have overlooked it, the wiki has some basic descriptions for the advanced settings, however not completely accurate on some of them:

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
Stupid 3D..
Hm, thanks. I googled this, but for whatever reason that page didn't come up.
