I have been working on this preset for the past week and I feel like seeing what others thought about it, so here it is. In this preset I have doubled the minecraft worlds elevation, the main result of this is more caves, ores, and stone to mine underground. Mountains and oceans still generate like normal, and the sea level is set to y-127. I have also added a more realistic ore generation by making each ore and stone variant have a specific level to mine them at. Diamond, redstone, and granite generate from y-0 to y-32, gold, lapis, and diorite generate from y-32 to y-64, iron and andesite generate from y-64 to y-96, and lastly coal and gravel generate from y-96 to y-128. Most ores are more common then usual, however they have smaller veins. The average elevation is around y-68 in vanilla generation, but in this preset it is around y-136.
tl;dr: I made a realistic terrain where the ground and sea level is much higher and has realistic ores.
Have Fun!

Sorry to say but you can NOT get more caves no matter what you do, unless you count hollow mountains (these will be flooded below sea level though); this was one of the biggest omissions Mojang made when adding the Customized settings. In fact, they even claimed that it was impossible to add customization to caves - despite the fact they changed them in 1.7 (making cave systems MUCH smaller*) so they should know that only a couple simple variables need to be changed (I can even mod snapshots to get the 1.6.4 caves back, taking only a few minutes).
*Here is a comparison of caves in 1.6.4 and 1.7+, using the seed "7020998152397947523", centered at -318, -247:
1.6.4:
1.7:
Also, making the ground deeper won't help much since the vast majority of caves are below the normal sea level - about 5/6 of all caves with half of caves below y=26 (the average elevation is a bit higher since the distribution is nonlinear):
Ravines are even worse; their maximum altitude is only slightly above sea level (they can extend higher since this is their center but not more than 20-25 blocks) and abandoned mineshafts only generate up to y=50 or so (ironically, you can actually change how common mineshafts are in Superflat - but not in Customized).
Note that the Wiki claims that the upper/lower limit scales affect cave generation but that is false; somebody should really go through the Wiki someday and correct it (for example, the link above claims the default chance of mineshafts is 0.01; it is actually 0.004 and has been for more than two years now; a simple check of the code can confirm this).
Also, you might want to reconsider the vein size of some ores; with a spawn size of only 3 lapis is impossibly rare - that results in an average vein size of less than half a block, meaning that more than half of all chunks have none at all; increasing the size by just one will more than quadruple the average size of veins but they will still be less than half the normal size, see my thread here.
That said, the settings for diamond are about right if you want the same chance of finding diamond by caving (for the same amount of caves explored) as a normal world, where it is around 6 times rarer than gold; 1.98 / (6.82 * 2) = 0.145 or about 6.9 times rarer than gold normally is with the same range. Conversely, branch-mining is impractical since it more than 5 times rarer on a given layer, but that was likely your intent.
So I was working on this really cool resource pack a while ago, but bad progress nonwithstanding, I think I found something much better... I'm probably gonna never release another custom Minecraft map.Until we meet again...
They really, really should have provided options for customizing them though; I'll NEVER play vanilla ever again, guaranteed, unless they do (not that I really even care about 1.7+). Even the bigger cave systems in 1.6.4 take me only a few hours to explore, I even experimented with such radical world generation changes as tripling the average ground level and cubing the size of cave systems (3^3 = 27) to match (sort of like what the OP did, but also scaling up caves, ravines, and mineshafts, though those caves were a bit too large for even my taste; my more recent mods increase the size variation of individual caves and ravines with otherwise near-vanilla cave density).
Did you know that Minecraft was first called Cave Game, a game that would be about, well, you can guess? In fact, InfDev and Alpha versions had even more caves than prior to 1.7 (though no mineshafts or ravines, which were added in Beta 1.8 and were the reason why everybody thought there were more caves; when first added mineshafts were twice as common as up to 1.6.4, which in turn was 2.5 times more common than 1.7+).
Also, ironically, older versions had more variation underground; it is even possible to find quite large areas with very few caves (the tail end of the curve for 1.6.4 is actually lower than 1.7):
I'm not the only one who is disappointed with the way they have changed the game either:

Alright, well that is kinda disappointing that I wont be seeing very many caves near the surface, but it is also a bit realistic. When me and my friend tested out this world in survival, we had to dig down to find our first cave, but after we did, we got quite a bit of loot from a dungeon. My main intention is to make strip mining extremely inefficient for my server, and to make caves much more rewarding(The now common dungeons are almost certain to appear in a cave, I went and played about up to day 10 thanks for the information about lapis, I will go update the preset to make lapis have a vein size of 4, but I will keep them at a spawn rate of 1. After all, enchanting is a (somewhat) important thing for certain players. In fact, maybe I could just remove lapis completely to make people have to trade with vilagers or use enchanted books from dungeon chests(There is a villager trade with 1 emerald for 1-2 lapis). Thank you for the tips, I will definitely take them into consideration if I remake this. Also, something off topic, typing on mobile is so annoying.

Well, certain ores will be rarer than normal, but because more caves may contain diamonds(Max elevation of diamonds is 32) you will probably get about the same amount as you normally do. I strongly recommend caving for ores and dungeons.

Update Log:
+Coal veins increased from 5 to 8
+Gold veins increased from 6 to 7
+Lapis veins increased from 2 to 4
+Andesite veins increased from 8 to 10
+Diorite veins increased from 8 to 10
+Granite veins increased from 8 to 10
-Biomes decreased from size 5(double) to 4(default)
-Diamond veins decreased from 4 to 3
-Iron veins' spawn rate decreased from 15 to 11
After doing more play-testing, this seems to be more balanced than the previous preset
