Amidst reports the strongholds (X,Z) are at:
-688, 0
432, -768
and
656, 896
Straight down from those locations will put you at the corner of the stairway shaft that defines the stronghold's location in the software.
EDIT(12/22/14) Actually this is not true, the stronghold positions reported by Amidst are of an X,Z point 2 blocks northwest of the northwest corner of that stairway structure. If you do what I say above it's possible for you to go all the way to bedrock without hitting any part of the stronghold. To insure that you hit the stairway add 2 to each of those coordinates. ie digging straight down at -686, 2 will cause you to hit cobblestone.
Large biomes would just make them larger and farther apart but the strongholds will still be very close to the same locations.

Can I make a request? I'm looking for a 1.7.10 seed that is nothing but big continental islands in a vast ocean. if you can, can you make them big enough to build villages form the millenaire mod on them, and have them covered by forest biomes. Thank you much and cool thread. I'm digging the seeds!

Does that mean that entering a PCMC seed into an Xbox360 running TU31 will produce the same biome map?
Here are all the differences.
Differences between 1.8 and TU31:
*Biomes are shrunk 4x (16x area)
*Big areas of land is purposely sunk underwater
*Rivers, structures, Technical biomes, subbiomes, Ocean islands, and M biomes generate at their PC locations
*Mega Taiga and Taiga biomes generate cold beach instead of beach
*Taiga next to Mega Taiga, Desert next to Mesa, Jungle Edge next to Jungles, and all beaches aren't shrunk but overwrite the main biome 3x larger
*Mushroom Islands generate differently
*Roofed Forest, Plains, and Forest generate differently around each other.
