You should try the infinite desert survival challenge. The idea is you have no wood so it is really hard to survive. The only way to get ore is to kill zombies for iron and gold. Having structures is optional but adding them makes it much easier. Or, you could try an infinite ocean maybe?
Setting the World Generation to Caves traps you in endless underground caverns.
Like the Nether there is a bedrock ceiling at Y=128
Unfortunately they've messed up the lighting, even set to full Moody it's not that hard to see where you are.
I'm pretty sure it was a lot darker in 1.13
And all structures and the bonus chest generate above the bedrock ceiling so you'd need to use cheats to give yourself a starter kit if you want to start out with some way of lighting your way, then you'd have to find a mineshaft to replenish your wood since I haven't seen any trees no matter what biome I set it to.
What have you guys found using the world buffet settings that could be used for a good survival world as far as a challenge goes that is realistic?
I have not personally found any yet that are REAL interesting, so I want to know your guys thoughts and what you have found while experimenting?

I'm doing a Warm Ocean buffet survival challenge right now, and it sure is fun.^-^
