I have seen plenty of videos for "Automatic" or "Fully Automatic" wheat farms. I put these in quotations because all of these farms require you to come and initiate the harvest, or something of that nature.
Is there any design that allows the farmer villager to collect the wheat on his own, deposit it into a collection system, and replant without any user interaction?
I thought I found a video for one not long ago, but I cannot find it again. I know there are fully auto farms for all the other types of crops, but some issue with the way farmers interact with wheat causes problems.
farming villagers distribute carrots, potatoes, and bread to other villagers when they have the item in their inventory. most designs work by placing a villager behind a fence with some hoppers in font of them to collect the product from the farmer.
if your having a problem with getting wheat, I'd suggest a system where the farmer only plants and water collects the wheat.

The issue with making a farm auto harvest itself is timing the harvest so that the farm is fully grown. This factor is so variable that you would need a timer that would only do it like every couple minecraft days. The timer also would need to not break if the farm ever became unloaded, which is another factor to consider and probably best to try and fit the farm in a chunk if possible.
Another factor for when to harvest is the design of the farm. For rabidsmores design you could alter the design to eject the planting seeds into the house instead to make sure the farmer is most likely to get them before they despawn. Then just put a timer on the button part of the circuit.
Can be done with no need for a clock and minimal redstone.
1. Load a farming villager's inventory up with seeds so that he can't pick up wheat.
2. Trap the farmer in a wheat field.
3. Under the dirt, have a minecart track that covers the entire field. Put a hopper minecart on the track.
4. Dump contents of cart into your collection.
Very simple. I did this in survival on a decent size field, expecting I would need multiple farmers, but it turns out a single farmer is able to harvest a very high rate of wheat and seeds. After collection, I'm sorting the wheat and seeds (and dumping the overflow, mostly seeds, into lava).
Anyway, yes, fully automatic wheat farm and very simple.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.

Just Setup A Field Of Wheat.
Have Dispencers That Shoot Water.Have Hoppers Pickup The
Wheat.The Villager WIll Pickup Some Of The Seeds.And Replant Time For The Villager.
i have that same design but with a runover dispenser setup that throws seeds into a lava block. only wheat in my chests now.
