Sadly, it's not working, can't get a slime to live past 1 hit. Any other suggestions?
Slimes are very picky about their attributes. The "Size" tag overrides relevant attributes, which includes maxHealth, attackDamage, and movementSpeed. The workaround to this is to summon the slime that's wearing gear that modifies their attributes. For maxHealth:
However, when setting the "maxHealth" using the "Attributes" tag, the summoned mob will automatically have their current health match the maximum. That doesn't occur in this case, since we're instead supplying an after-the-fact modifier. This means that the slime's maxHealth has been increased by 100, but its current health stays the same. To overcome that, you'll have to heal it in some manner (note this requires 1.8):

I actually compensated for this by setting their heath to 1/2 a heart
/summon Zombie ~ ~ ~ {AbsorptionAmount:100}
This is when u want the zombie to have 120 health
