For some reason items are going past sorting hoppers without going into them, they are not being powered in any way, so I can't think of why this would be happening, anybody know anything about this?
As you can see if you look closely in the image, there's a diamond between the two hoppers on the right that didn't get picked up by the middle hopper.
They contain 41 of diamonds and netherite, and I made sure that they aren't getting filled up to quickly. I've seen them get up to 43 items at the most. The rest just flow right past
I've remade this somewhere else putting in a few items at a time and still some flow past
I'm at this point fairly certain that using anything to do with ice in between the hoppers will make the item go to fast across the hoppers making them unable to pick them up :/ So far the test that I'm currently doing has proven this true, thanks though.
There are 5 slots in hoppers, which means you can only add 5 items in a hopper.
That would be 5 stacks of items. (Or did you mean 5 types of items?)
These hoppers would be parts of item sorters and when they start to fill up items get sucked out by a hopper underneath them so they should never fill up completely.
And each hopper would only have one or two types of item, the item to be sorted (diamonds for one hopper and netherite for the other) and, usually, some junk item to block the last four slots so only items that the hopper can pick up are the ones in the first slot (since you would see to it that the junk items aren't present in the stream (if needed by renaming the junk items to make them unique.))

Will they pick up single items? I've ran into situations where I would reach the limit of how many items a hopper can pick up in a game tick. So if I had several farms pushing one type of item into a waterstream, I might have a lot of items of one type.
They occasionally miss an item or two, I used to have it setup so there's two blocks of ice between hoppers with a dispenser on a two redstone tick clock dispensing items and some items "flew" right past the hoppers, just don't use ice and you should be fine.

Have you checked that the diamond slots of the hoppers aren't full?
