How could I show, instead of a UUID, the entity's CustomName value as its name on the sidebar?

You cannot. You would have to create a secondary score with the custom name (via fake player) directly and copy the score over from the entity. Example objective used solely for display:
/scoreboard objectives add Display dummy /scoreboard objectives setdisplay sidebar Display
Objective that would hold the actual values:
/scoreboard objectives add Score dummy
/scoreboard players operation NameToShow Display = @e[type=ArmorStand,name=NameToShow] Score

First we need a scoreboard
/scoreboard objectives add Scoreboard dummy
Than creating a counter
/scoreboard players operation a Scoreboard += Counter Scoreboard
And deleting appeared 'a'
/scoreboard players reset a
To add some value to counter use
/scoreboard players add Counter Scoreboard 1
To reduct value change 'add' to 'remove'
/scoreboard players remove Counter Scoreboard 1

And then you'd use the "=" operation to copy the entity's "Score" score over to a fake player of the desired name's "Display" score:
