This. The rest of the update will probably be a few more recolor blocks like a neither slime red block/dye-able slime blocks, maybe 1-5 new blocks/items, more edits to the villager trading. Maybe fixing a few bugs if it has any with the slime blocks. Maybe another secret filter/switch option or more streaming stuff.
Maybe the harder mob will be baby endermen or maybe it'll be baby witches. Or maybe they'll copy what some mods do and have cave spiders spawn naturally in jungle biomes.

Hardcore mode isnt hard.
hard mode only makes mobs hit harder and your hunger annoying.
making rules doesn't make something harder, it limits you.
I want real difficulty. not like, THOU SHALL NOT MAKE NO FARM.

Heck, it's a SANDBOX game where you do what you WANT to do....and conversely DON'T do what you DON'T want to do...
I have one world that is three years old, and have NEVER used enchants in, so any changes to that part of the game have absolutely no effect on that world, and I generally tend to do the same in most of my other worlds, however that is MY option.
The more ores, the better. It is more choices for me to use...OR NOT. It is the same with colored items (wool, wood, clay, etc.). Mobs too easy? DON'T use a diamond sword. Fixed.
Too many forget Minecraft is sorta like a Bob Ross painting, "It's your little world, make it how you want....." There are no rules saying you have to use everything, or make anything that you don't want.
Whether this is a big addition or not seems to be subjective. The more they add, or anything they add, the better, I say.

Yes its a sandbox, how fun if its a sandbox if i finish the adventure part of the adventure update in 2 hours. Then what to do. Build gigantus things without any challenge since that was gone since the first night in MC.

If you want the game to be harder, then do stupid challenges like youtubers do. Make it eternal night, survive only off of meat, kill the Ender-Dragon with no armor! It's not easy, it's as easy as you want to make it. If you actually tried, you could make the game pretty dang hard.

What limitations?! If you haven't noticed by now, Minecraft is a practically infinitely generated sandbox game. That isn't a limitation, so what is? The new villager types, the new stone types, the new command block features?

IMO, To fix the balance from what I have seen so far, remove the hostile mob drops from villager trades and make XP a little harder to get I think it would of been better to make gold used instead of lapis, since gold is also pretty useless but it is much rarer.
How is gold useless? It's used for healing potions, powered rails, golden apples, golden carrots, and horse breeding.

Overall makes mobs more effective which makes it a lot harder. If you want more difficulty then add some yourself. As you said "THOU SHALT NOT MAKE FARM". Go ahead and make that rule for yourself. It isn't difficult to do these things.

If you want difficult mining then restrict yourself to iron pickaxes or diamond pickaxes without enchantments. Revamping enchanting doesn't necessarily make things harder. And

Self-imposed challenges are fine in SSP, but when you're in SMP everything is much worse. Every exploit would be used by the most of people, so you'll have to do the same or lose.

Mojang has made 4 major updates in a row now. I think a break would be nice.
And about the difficulty aspect: So you think that limitations aren't "real difficulty?" If Mojang suddenly removed enchanting you would be fine with it, but if you make the decision to just not use enchanting that's "fake?" I don't really get your logic here.

Yeah it's a bit hard to justify calling gold more useless than lapis.
