I've started two worlds with 13w41a and done a lot of digging, but I haven't found ANY iron ore. Am I being screwed by the RNG, or is there really no ore?
Anybody else seeing this?

Your most likely unlikely, and I am pretty sure the rate of which Iron appears has been toned down because normally I get like a stack of 64 in a twenty minutes if I find a good cave.
I made a world in 13w41b using the same seed as my main world (-123775873255737467) and got the following results for ores per chunk (analysed with MCEdit), followed by the "expected" values per the Wiki:
It appears that the generation of coal and iron has been increased significantly; the other ores are also a bit higher than expected, except for diamond, perhaps because there are fewer caves in the new snapshots (not that there weren't any in the area I analysed, including several ravines and an abandoned mineshaft).
I only analysed a 320x320 area, or 400 chunks around spawn, but there shouldn't be that much variation (coal and iron) unless they did something with the code to make some seeds have a lot more of an ore and vice-versa. However, I analysed the same world made in vanilla 1.6.2 (not my main world to avoid bias because I modified cave generation and explored it out around spawn) and got results much closer to those in the Wiki for coal and iron and slightly less for all other ores, the latter again likely due to the changes in caves; the 1.6.2 world has over twice as much lava, a good indicator of cave density.
I also explored a few caves in the 13w41b world and saw plenty of iron ore, just about what I'd expect to find (also came across several veins when digging straight down to find a cave).
I noticed something similar in my Amplified snapshot.
But I think it's a case that I'm strip mining down around bedrock up to 12 looking for diamonds. Their is a pretty extensive network of caves and mineshafts over me, so I think all the iron spawned up their and left the bottom layers rather devoid of Iron. Diamonds were there though.
Found one of the Strongholds in the world and explored it. Found a cave system shooting out of the Stronghold, down deep. It is loaded up with Iron and Diamonds so I don't think the amount of iron generated changed. Just it's location.
